Gaurenteed way to win (assuming no disconects or unforseen glitches)

First off, forget the combo training you did, the comp is often faster cause of ping. Its very unreliable and often just gets you killed. If you try for it, the computer will just do it to you and you will be in a bad way

Start the fight with 3 stacks of Defense
Melee him till he moves to range
Charge his rear
melee till he moves to range again
Repete till victory

Only refresh defense while in melee range, as it shares a cooldown with your ranged attacks, but not your melee. If its on CD when he moves to range, you will be combod and very likely lose

Lost? Can't complete the quest? Can't mount the Quel'dorei Steed or Sunreaver Hawkstrider?

You can now mount your race specific mount and are supposed to use this mount to complete this quest.

For those of you that suck on ice, like I do...

Stack your shield to 3 before you start (obviously). Take two fingers. Put them on keys 1 & 2. Put your other hand on your mouse. Challenge your opponent.

When the fight starts, began rapidly hitting keys 1 & 2 over and over again. Stick to your opponent like glue. Don't give him even an inch to breathe. Follow him everywhere. If you give him any room at all, just make it a few feet to get in the occasional Shield Breaker. When necessary, repair your shield. If he starts to wander too far from the field, just back up a little to lure him back in. Charging is not even necessary.

This probably won't help if you just have latency issues, but if you just suck at jousting it works. I was running around and charging and trying to throw Shield Breakers from halfway across the field like I saw the people who are good at jousting doing and I was losing every fight. When I started sticking to my opponent like glue and spamming Thrust/Shield Breaker, I started winning every fight.

The downside is that it's a bit slow and it'll make your arm ache after a few matches.

Don't be stupid (like me) and have 0 empty bag slots when doing this, or you will not be able to pick up the Mark of the Valiants.

The Grand Melee

Bring 3 Marks of the Valiant to Clara Tumblebrew at the Argent Tournament Grounds.

If you lose your lance, you can get another from any of the Lance Racks near the stables or in the Silver Covenant Pavilion.

Description

The grand melee is the most important of the tournament's competitions. The people of Ironforge are looking forward to hearing of our success. To that end, they've been honing their skills against the valiants representing the other Alliance capitals.

I suggest you do the same. The valiants practice in the ring just outside our tent. Equip your lance, go to the stables outside the pavilion and mount the stabled Ironforge ram, then challenge other Alliance valiants.
