If you do decide to come back, wait for 3.3 to hit, so you can have the real shocker if you're playing any shadow spec at all! If I remember you were a healer, so the healing has had some slight changes since 3.1 "slight". You also missed players now being able to gear up from being brand new 80's with newb gear to ppl being decked out in ilvl 219-226 gear and a smattering of 245 gear in just a few short weeks.
You can always check out the history of patch notes to tell you what you've missed.
Here's where it will start for you. :-)
Priests haven't changed drastically (yet, just wait for 3.3 and respec your 2nd spec to shadow!).
With the Argent tournament hitting, the Trial of the Champion instance got farmed and ppl made out like bandits with tons of really well itemized 200-219 gear, meaning that most players could now skip Naxx all together for gearing. As well, since everything drops Conquest badges (soon to be Triumph badges), lvl 226 gear is now fairly ubiquitous.
The new raid instance Trial of the Crusader is also a fairly easy instance (heroics are challenging though) with several really fun encounters, but it gets pretty old pretty fast. Good news it, there is no trash! Just a lot of talking, but it's better than trash! Each boss drops 3x Triumph Badges, which can be used to purchase ilvl 232 or 245 gear (245 tier gear requires a
Trophy
). Soon, all Northrend badge drops outside of Icecrown Citadel will be triumph badges, making higher level gear even more accessible earlier.
Onyxia is back and easier than ever. She dies mega fast and drops 245 helms and some nice weaponry + trinkets. The Transcendence helms are back!

I totally missed you guys.
But yeah, if I do end up coming back at all, it probably won't be until Cataclysm. Despite Blizzard running the game harder and harder into the ground, I still like it (or at least I think I do).
Yeah, with Diablo III and Starcraft II closer on the horizon, they've got their hands full trying to keep people tied into their games. Aion is pulling WoW players now too, which makes competing even harder. WoW is now, what Everquest was to many players a few years ago.
