Volitaile haste and Enhancement

Ok, I finally went and plugged some of my stats into Enhsim and got an EP value of 2.5, which means that haste gemming is the way to go unless my simming went wrong.
But what is the nature of haste's volitility? Does it mean that haste simply goes up and up in value as your gear improves? Or does it peak and trough as you upgrade gear, meaning that gemming haste may well be LESS beneficial at Icecrown levels than at ToC levels? Also, what causes the spikes and pits - extra AP, haste, etc?

Don't rely on EP values for gemming, especially due to haste being very unstable the EP values might change a lot for every change in gems you do, every other point of haste might get it's EP way high up or very low again.
You should test out various gem combinations and then sim then to get real result, or if you want to go by EP, gem after EP and then sim again to get a better idea of how it works.

I realise that Haste having 2EP doesn't necessarily mean I should go gemming it, i'm not really asking if I should or shouldn't. I just want to know more about the volitaile nature of haste, like if I could upgrade to some T10 and see a drop in EP haste. Or, if the stat it just exponential after you get sub 1.51 weapon speed.

It is volatile, like I said, even a slight increase in haste might change it's a EP way up or down.
Extend my "don't rely on EP values" to Equipment, too.
If you want to know how the EP changes, then sim it, you might want to use Rawr to change your equipment, as it has an export to EnhSim option, this way you don't need to calculate the stat change yourself.

Each individual has to do their own simulations, since there is NO set "break point" where 1 haste = 2 AP. It all depends on gear: gear, buffs, debuffs, latency, and the like. I've had several sims show that I have a haste EP slightly over 2, meaning that it is worthwhile for me to go pure haste. However, I change two gems and it's back below 2. It's VERY touchy sometimes.
It's the reason why I, and several other top Enhancement Shaman, just go ahead and gem straight for AP. I know what the sim is saying and it's a valuable tool...but I'm not so certain that once you account for reaction time, latency and everything that happens during a fight that haste is actually better for me at this point. I make a mistake in my rotation from time to time, etc. For me, stacking AP just makes me more. For others, it may vary.
Just saying, there is no magic number here.
