i think it's worthwhile for you to spec prot to try out different gameplay
but to tell the truth, you won't be "improving" your char by speccing prot, it will take a lot of learning for you to get a handle on your new mechanics
personally i would go with something like
this
i like being immune a lot for the learning curve.
i have a setion on farming with AoE in my guide
as for ret, i think your respec idea is ok since e4e is useless in PvE/leveling

I respec'd Holy at 40 and have not looked back. I have a great time and I am welcomed in to parties with open arms.

toughness will help reduce a couple % of damage...
with the damage at level 40 taken/hit, that's nothing...
anticipation will increase defense, hence, dodge, parry, block and miss
yes, BoK doesn't increase AP as much as BoM, but it also increases your HP, mana, agility
it's really nice for any group with 2 or more paladins
you can always take it out an put it in one hand spec or toughness

read section 5 of
Paladin tanking and AoE for dummies. (~70% done)
as for greenjuggalo16's level 70 spec, it's a good build for heroics and 5 mans, but you won't use that as a raiding paladin, raid mobs are usually immune to HoJ and Precision is a must have but isn't present on the chart... etc...
PS. PoJ is taken for the decreased spell strike chance rather than the speed increase as of 2.3

and 2% Stam bonus, mostly because more hits means more procs, potentialy, and I dont quiet use Divine Shield too much.
i'd still go with Divine purpose, 6% for 2 talents vs. 4% and bit of expertise from Combat.Exp
hit really isn't too important until later... (in my opinion)
