Well mining and skinning costs nothing, only gains. Altho they dont provide nearly as much buffs to your dps/healing as the profs.

The professions that are purely money makers don't give as good a benefit as the professions that craft things.
Jewelcrafting and Blacksmithing are the best for giving you extra stats, but are expensive to level (mostly blacksmithing is).
Alchemy, Enchanting, Leatherworking, Tailoring, Inscription, and Engineering all give you good, versatile combat-benefit too.
Alchemy
(mixology, increase the effect and duration of elixirs and flasks you can make)
Enchanting
(you're able to enchant your own rings, rings can't have enchants on them otherwise)
Engineering
(enchant your gloves with the best enchants in-game, and your cape with a better than normal enchant.. also various other personal and group utilities)
Inscription
(gain access to the best shoulder enchants)
Leatherworking
(gain access to the best wrist enchants)
Tailoring
(enchant your cape with a powerful chance-on-hit effect)
Jewelcrafting
(able to craft and wear three super-gems in your gear, these have higher stats than any other gem)
Blacksmithing
(you're able to add an extra gem socket to your gloves and bracers, these stack with enchants)

I would go for Mining/JC for first char (or first alt), unless you already have an end-game miner.

Mining is not insanely profitable, having a crafting profession and spending the same time in the AH nets you more.
Saronite on my server goes for near vendor price.

Mining, aside from questinable (better say, dependent) profitability, will yield you the mats needing for leveling crafting profession.
Not cheap, but easier, unless you are really good to fish up things at AH.

It's a balance of time versus gold.
I can make ~2-300G/hr on low average mining at epic flying speeds + crusader aura.
People make the same amount with dailies.

i would rather not fish around in the AH looking for crap at low prices when i could be out getting the same mats myself for free
Mats gathered by yourself aren't free.
They cost as much as you can get selling them to the first bidder.
