Herb/Alchemy is good for most classes in general. My paladin is Enchanting/Mining simply because the mats for both of those sell really well - I'm more of a disenchanter than anything.

I'm alc/herb on my palla...it's really good, and it makes the potion alot cheaper then buying them...plus you can make good money on arcanite bars and primal mights when u get up there

I went Engi. for all the fun stuff, and, of course, the explosives. They really help when AoE grinding. Of course, I'm always broke, but whatever... as they say: "/.../ the love of money is the root of all evil /.../."

The goggles are simply superior to everything up till T5. And even then, it's close. You won't be able to get the nether to make them till you are level 70, generally, so it might not be worth leveling it up now.
Gathering professions like Mining and Alchemy are good money makers - mining especially, since low/mid level ores will sell very well to people who are powerleveling their way to maximum Blacksmithing and suchlike.
When you reach Outlands, being able to disenchant all the green and blue quest rewards you get but don't need is a great way to make a LOT of money. Small and Large Prismatic Shards fetch a premium, Arcane Dust and Greater Planar Essences are always in demand. And greens you disenchant below level 60 will still give things like Illustion Dust, Greater Eternal Essence, etc which are required for twink enchants. You won't make much money actually doing enchants, though. Enchanting takes a bit of investment but pays for itself many times over. Plus you can always use it to give your stats a little boost on new gear you get as you level.
If this is your only or best character on the server, I'd go with Enchanting and Mining. It's guaranteed money - sell the Ores to fund your Enchanting and skill up so you can disenchant everything in the game.

Well, since you won't be hurting for gold I would take Enchanting for the benefits it will give you at 70.
Herbalism too. Although you have a level 70 herbalist, it won't have all the low level herbs you need to level up Alchemy. So whilst you are grinding your way through areas which DO have those herbs, you may as well pick them up on your paladin. Then when you're at 70 and no longer grinding and finding herbs which you can't pick on your mage, drop it for Alchemy and level it up in one sitting using the herbs you picked.
