Mix and match, gotta go for which gives alot of plus healing, set bonuses while maintaining a large mana pool, spirit and health if you pull agro (and you shouldn't).

Personally I would not get spirit, I would prefer Crit and mp5 above it a lot. I might even consider preferring crit above healing sometimes. (mana efficiency is more important in long fights, and crit = more healing altho not as stable) I also use theorycraft to see what you gain by changing gear, and what a healing spell really heals on average (calculated the crit with it if you want)

Healing, spellcrit, mp5, int, stamina.
The arena gloves kick ass due to the equip-bonus, you should at least get them.

I don't pay lot attention to spellcrit because of the Illumination nerf, I prefer mp/5.
I got pretty large manapool, 10.9k, but relatively low HP, 7.8k.
Bonus healing is around 1580 unbuffed. :)
I pretty much put them in this kind of list in priority:
1. Int, +healing
2. mp/5
3. Stam/Spell crit (Nice bonus but nothing important)
I can't remember when I oomed last time in bossfight and I don't have to take pots right when cooldown finishes.
This is my way to play holy, I know that some ppl want to get lots of spellcrit instead of mp/5, but mp/5 is better for my playstyle. :)

What stats you focus on with your gear depends very much on your play style and the role you take in raids.
I focus on +crit and have about 32/36 % with FoL and HL. I very rarely go out of mana, even on long fights, since I have a Shadow Priest in my group at all times. Even without the SP, I manage very well on mana conservation. And of course, I do a LOT of healing - almost always top of the heal meter.
If you decide to focus on crit, I have the following advice on gear.
Arena and Honour gear is very nice for crit, though it has no MP5 and often a little less +healing. But it is generally better than the gear from KZ. It also has a lot of stamina on it, which comes in handy. The Bracers are great, as you can socket them with a crit gem.
T4 gear is weak, and T5 isn't a huge lot better. The legs and shoulders are nice as they have good +crit/+heal and nice sockets.
Arena gloves are amazing and I highly recommend them. Nothing comes close to the +crit power they have. Arena chest is also good as it has a lot of crit but lacks healing. But this can be helped a bit by using +18 heal gems.
For the helm, I'd recommend the engineering goggles as they have all-round great stats until T5.
You didn't give much info about what level you are raiding at but Arena and Honour gear is worth working for, even if it takes a few weeks of grinding. I'd start the grind now and save your points for 2.3 as the upgrades make these parts even more attractive.
A lot of paladins don't seem to rate +crit very highly and I read a LOT of crap on here that involves phrases like "since the Illumination nerf". But even at 60% it is an amazing ability which boosts your staying power a lot.
In a raid I will have around the following:
11.5k mana
11k health
1750 healing
160 mp5
32/36 crit %
My priority on stats is crit > healing > mp5 > int > stamina.
I am rarely outhealed by any other healer on the raid. I've also pulled off some pretty cool stunts like solo healing Nightbane and keeping the remains of an almost-wiped Morogrim raid alive with only an oom shaman to help (did 25% of all healing). Though this is probably more due to ability than spec/gear. :P
As I said, it all depends on your play style. You might prefer to stack up +heal and mp5 and be able to spam FoL for eternity.
