Well one pitfall is that instant pyro is not the best spec for 3v3 and 5v5 anymore now that most arena opponents are relatively well geared for it. Not untill you all get ice block in 2.3.2 anyways. Reason is that your instant pyro will take 25-30% HP off one decently geared PvP player even if it crits, which will be healed back just as fast. And PoM mages are fast and easy to kill for many classes. Frost mages on the other hand are very very hard to kill for many classes. But if you are raiders a specc change is probably not likely so maybe just practice with what you got. It can work in the right situations.
Another pitfall is that PvP tactics are nothing at all like raiding tactics. Not even close. "DPS" as you'd think of it in PvE (i.e. sustained DPS) is totally irrelevant. Burst DPS is important, evasion/escape tactics are important, survival is critical (can't DPS when dead) and CC is king.
Make sure the mage has /focus macros to Counterpell and Sheep targets. A focus target casting bar is very usefull too because you want to cast it at a critical moment. Make sure your priest uses his fear and silence so that together with your CS and sheep you can CC a healer for an extended period of time. Use Line of Sight to avoid ranged, and practice how to stay alive when a melee class is ripping you up.
To simplify the tactics greatly you will probably have to quickly asses whether you are doing "kill the healer" or "CC the healer, kill something else". If you are doing "kill the healer" you need to be sure you can kill him in the time that your Counterspell then Silence will give you and that you will be able to get your dmg unleashed without being CCed yourself, if you can't then you're probably better off CCing the healer.
Get a minimm of 10k HP each.
Get an arena targetting addon like Proximo.
Don't enter arena without the PvP trinkets.
I know you said you didn't want 'do tons of pvp' as the advice, but I urge you to go into BGs for a week or so (not AV) as a trio and practice dealing with all sorts of classes. Otherwise arena will be a rather painful experience.
