JC - Good for everything there is.
PvE, PvP, Money making, etc.
Engi would probaly be better for PvP, but worse for PvE and money making imo.

I have mining and JC and it's great for making money and for the bonus of the +34 gems. If money is not the goal then adding another crafting prof that allows extra sockets or other bonuses would be good.

JC is probably better for money making.
But as far as utility goes Engineering is
much
better. You will love the parachute in PvP and all the gimmicks it provides are just awesome. The extra mounts are also nice to have.
Both are fine professions and both are kind of hard to level up.
I'd recommend going with Enchanting as the 2nd. It surpasses both in utility by far (especially when you hit 80), is very useful already when leveling (while JC for example is almost useless until you hit at least 60) and it is flexible and also a nice money maker. And you don't even need a gathering profession to support it so you can think about taking something else then mining if you want to - or you just sell the mats you get from mining for some very nice gold (much better then using the mats to level Engi or JC).

I do JC and Alch on my DK. I transmute a gem everyday and cut and sell as well as get gems with honor/emblems. JC is indeed a great money maker.
I do have 2 other 80s as well, one with 450 mine and 450 engineer so I didn't need a miner. You may not have this advantage I don't know.
