funest .. well .. i dont know if there is one.
Mining is tedious and blacksmith is the most tedious along with engineering.
Tailoring is easy but useless except for hording the AH with cheap profitable 16 slot bags (which bought me my epic flying mount)
Enchanting .. go die hard or this will be worthless. this is a huge money sink if you dont have passion to sell it.
Skinning is easy and boring. repetive and usually the AH is flooded with mats anyways.
Leatherworking .. even end game material is weak. Not worth it imo. Hardly anything to go for ...
I never tried Jewel crafting ... the only thing that kept me away is the mining. I hate mining since release i was either engineer or blacksmith and i am so freakin tired of mining!!
Alch and Herb is pretty decent. Sells moderatly well and the end game pots are pretty benificial. BUT .. im still pot shy. Dont want to waste them .. miser them all up and die. Making pots are fun when i tried it.
So ... i say .. the funnest profession is ... Fishing. hands down.
Yeah... about the leather working part... armor kits, some awsome gear(for hunts and shamies)

Engineering is the most fun for sure. You can shrink yourself (which is very comical with a gnome), you can chicken people, you can net people, the gnomish death ray is neat (or gobbo rocket launcher). The transporters are great for getting around. All sorts of combat/non-combat pets and petlings, battle chicken, dragonlings, bomblings, tranquil yetis, great stuff.
Of course, that said, now that I've hit 70 I rarely use any of that stuff. The only things I've used in the past month are the gadgetzan transporter, the poultrizer (+45 STA trinket, hey!), and the shrinker once for grins. Oh, and of course the helicopter (engineer flying mount).
And then you'll need miner to go along with engineer, of course. Mining is not much fun, but I suppose it's slightly fun to get a gem.
