I wonder the same thing but I think that I am going to go mining and blacksmith so that I can make my own stuff in the later levels and use the mining to also make money selling ore. My main is pure gathering (mining, herbs) and if I spend a few hours farming I can make probably close to 1000g on a good day.

In my opinion,
engineering & jewelcrafting are the optimal hunter professions.
For PvE, that is.
Jewelcrafting
Jeweler's gems. MM and SV Hunters will use 3x
Delicate Dragon's Eye
, boosting your agility by 42 points. BM hunters will use the
Bright Dragon's Eye
. It's a no-brainer, really.
Profit. As a jewelcrafter you will have the option to farm the Auction House, and if you know some simple economics, it's easy to earn money from this profession.
Independence. Cut your own gems, save yourself the gold.
Engineering
Now, there may be some whining about engineering sucking now, but as Engineering got buffed in patch 3.2, it's now a fairly good profession.
Nitro Boosts
: Crit rating +24, and one of the most powerful enchants in high-end raiding. It allows you to run fast as hell for 4 seconds, very handy in emergencies and in fights like the heroic northrend beasts.
Flexweave Underlay
: The BEST cloak enchant for hunters. +24 agility (enchanting gives +23), plus it allows you to trigger a parachute, saving you from fall damage. In plenty of boss fights, you will end up in the air. Parachuting will save your healer's mana.
Runic Mana Injector
: Increases the mana gained from potions up to 5500 (from 4400). A little extra for those long fights.
Saronite Razorheads
: Make the best projectiles yourself. They're very cheap to make, and you can make them anywhere (running out of ammo in raids arent a problem.
Engineering also has some great features for convenience. You can access the Auction House in dalaran, teleport to 5 different northrend zones, access your bank anywhere, and read your mail without being by a mailbox.

Runic Healing Injector
: Use: Restores 2700 to 4500 health. Effect increased if you have the engineering skill. (1 Min Cooldown). For those 'Sacred feces!' moments when the healing don't come.

: Razorheads for if you use a gun

Jewlcrafting:
For
Delicate Dragon's Eye
gems. These gems add +14 Agility to your gear and is extremely helpful for raiding and making money.
OR
Inscription:
For
Greater Inscription of the Axe
, screw grinding Hodir rep! This enchant will save you the grind and the profession will make you bank!
OR
Leatherworking:
For
Dragonscale Leatherworking
so you can make all your own Mail patterns so you don't get scammed and at the correct skill level you can make a bracer enchant that will make you feel like teh smex.
For max PvE DPS I recommend the combo of LW/JC, but some profs work better for other hunters, these are the ones that help mine.
