Tbh I'd stick with Alch / Herb. Yes, when you first go into Kara, the Frozen Shadoweave gear is very nice, but you have a good case argueing that you should get priority on gear that drop in kara for those slots since they're big upgrades for you. If that doesn't work out, there are heroic badge rewards. So I'm not sure that Tailoring would give that much benefit in the long-ish run...
If you were to switch your best bet would probably be dropping Tailoring from the 33 Mage to take Herbalism and then levelling to 70, but that is going to take 12+ days playtime, which for me would be loads ;) Although the levelling would give you most of the cloth to level tailoring on your lock. But it would still leave you with problems going into WotLK, because levelling Alchemy in the new expansion without Herbalism on the same character would be a pain.
So instead I suggest you ask for a regular gold contribution (or equivalent supplies of picked herbs) from your guildies, and get the guild master to look after that. The usual way to motivate that is to say that people who've paid their dues get priority for raid spots, hehe. You could even pitch it as "in order to allow us to have more potions, and make better progress, I'd like to do this..." so people will feel they're getting a better chance at success for their efforts and it's not being imposed by guild in response to a whine. Yes, I work in management in my day job ;)
Just 10-20g a week, which is not a lot of work even for casuals with a daily quest or a bit of mote farming, would leave you with some gold to buy herbs from the AH with. More potions made = more raid progress -and- for you personally more discoveries = more rare potions to sell, so you should end up making a profit eventually.
It's unfair for the guild alchemist to be roped into doing all the herbalism for raid potions, I wouldn't put up with it.

The only reason to skill up in tailoring is to make bags (which can be easily acquired from AH) or one of the L70 epic sets (which also can be acquired from AH if I want them).
There are 2 seperate sets of lvl 70 epic gear from tailoring though: the 2-piece Whitemend and Battlecast are BoE and can be bought from the AH, with you only losing the set bonusses if you don't have tailoring. But the very nice 3-piece Frozen Shadoweave, Spellfire and Primal Mooncloth sets are BoP and require that you have the right kind of Tailoring skill in order to wear them.
