I just came back to my enh shaman and i get the idea i should gem for agillity.
But isnt it better to get 2x ap from the ap gems than i do from agility. Also i could get some pure crit gems so i increase my spell as well at physical crit, as agility only increases melee crit chance and spell damage is quite a large part of enh shaman damage.

Raw AP. The crit you "lose" from not gemming Agi is quite worth the extra AP.
Compare the two.
16 Agi + 1.6 (Kings) = 17.6 x 1.1 (Unleashed Rage) = 19.36 AP + whatever crit.
32 AP x 1.1 = 35.2 AP.
So, gemming Agi gains you a small amount of melee crit (i'm not sure of the value), but loses you roughly 15AP's worth when raid buffed. Not the best idea for DPS.

Would you suggest also gemming for crit rating?

Man and to think I just started liking mine again ? :) It is definately a different play style than Pre-WotLK but now that I have somewhat decent gear it's amazing what you can do with these guys. Can't wait until I get better gear, should be melting faces then.

Is hit really that great, i mean offhand shaman damage is pathetic, 50% less or 55% if u include the 10% more weapon damage from talents.
I doubt much of our total damage comes from it? Though more hits does = more mealstrom which = more dps.

The hit is not for DualWielding damage but for our Spells damage (Earth Shock, Lightning Shield, LightningBolt/Chain, etc). By missing with those, we lose a lot of DPS overall.

Yeah but the spell hit caps below the dw hit cap. So would you just stop at the spell cap?
Though more offhand hits means more mealstroms,

The amount of misses you have when spell hit capped is quite marginal. Not to mention how ridiculous it would be to have to cap out the 18% (?) melee hit needed.
Oh... and if the Boomkin/ SPriest thing is an issue, try getting some gear which gives you exactly 3% spellhit to switch around for no boomkin.
