Time for a Divorce.
Barring that, find some comprehensive guides to her class. Once that explain indepth her class mechanic and role.

DPS is about maximizing your output, but keeping
control
over your threat. This applies for any class with a DPS role in a dungeon, not just hunters.
Hunters have probably the best aggro wipe in the game besides a rogue. Feign Death is your best friend and hunters, even those without aggro over the tank, use it anyways ever time it cools down to wipe their threat. All you need to do is click it, wait a second while you "die" and then jump back up and resume as normal.
While I'm sure she meant well, warcraft is a game of very narrow class mechanics with very little wiggle room as far as party roles go. A druid or a paladin can be a healer/tank/DPS, but not at the same time. A resto druid switching to bear or cat form still dies in 5 hits or less because their gear and talents are not itemized or ideal for absorbing damage.
To someone new to the mechanics of even a basic 5 man, the concept of having on person be the focus of all the enemies attention while other people in the party wail on the enemies and the healer heals the person being beat up seems utterly alien. Next time you get a chance, I would show her the armory link of a tank (Or the tank you had) who will be in your group and compare stats. Most people, once they realize that someone is better geared than they are, are typically more willing to let the better person do their job without interference. At 80, it would be something like most tanks having twice the health and (Even in the case of mail wearers), twice the armor as well.
If she's still having a problem with maintaining threat, Omen Threat Meter works great and isn't too hard to understand.
For basic information, I would take a look at:
http://www.wowwiki.com/Hunter
Most of the information on websites like elitistjerks focuses more on lvl 80 mechanics and are of little use to people below that level.
Probably the best person to ask is other hunters. Every hunter has had huntard moments. To err and not know is not a crime. To know better an err anyways is true crime.

Letting her die probebly the best way to ger her to learn. although she could turn that against you and blame her death on you not healing her. however if the soft way dosn't work you gotta use the rough way and if she just cant learn from you perhaps you should try getting someone else to teach her.

As someone who leveled a rogue alongside my wife's warlock, I offered as much advice as she would listen to. Oh she had mobs streaming across Azeroth and Outland from like 2 zones over she pulled so much aggro. Then she complained every time she died. I pointed her to various forums and databases. I downloaded and installed add-ons then showed her how to use them. She's a 75 now and...
SHE STILL DOES NOT GET IT!
Some people never do
She rolled a DK and now everyone is happy.
End of story.

Could you maybe download Omen for her? If she can accept that she must keep her agro under the tanks, Omen should make it easier to attempt it.
there is no need for omen, you can see your agro on the mob you're targetting without any addons
I just meant Omen puts it in pretty coloured bars :)
And your whole screen flashes red too lol

I had a similar issue, my hubby's DPS toon needed some work.
He didn't know the right rotations, and talking to other warlocks + reading warlock guides helped.
He'd sometimes just blast his AOE too soon, then he'd ask me "Why didn't the healer keep me from dying?"
I told him "Because I am the tank, and it's their job to keep me up. If you rip stuff off me, and get killed, it's not the healer's fault." In other words, you pull it, you tank it.
When I started healing, and he watched me do that, he started getting the concept of aggro down even better (It's a complicated term, loosely translated it means "the healer dies").
Getting Omen and recount helped too. Sometimes it is hard for a newb (slightly different than a n00b, everyone is a newb at some point, you have a choice to progress and learn, or else stay as a n00b) to understand class roles.
The Hunter class role is damage dealing. Until her hunter gets a shield and gets def capped, she ain't gonna be a tank. If she wants to be running in there whacking on stuff, I suggest re-rolling a paladin.
I have also had to talk to my son about his hunter. Being his mom, and having 2 level 80's he listens to me most of the time. I didn't give him the go-ahead to take dungeon group invites until I was sure he grasped the concept of NOT shooting stuff unless the tank was targeting it, and not putting his pet on aggressive, etc. He's 11, and I have actually run into people older than me who are worse at playing hunter than he is!
A good site for basic hunter info is
http://www.aspectofthehare.net/
Maybe that could help. Lots of it is aimed at end-game, but there's also basic hunter concepts explained too.
