Do you ask for a tip up front?

It depends on what item I am making for the tip. Normally for these items (ulduar or toc pattern drops) I will tell them upfront I charge 5-10% of the standard AH price. If they don't agree then I wish them well and don't make the item. If they do agree then yes, once I make it I don't hit that trade button with them until they have placed the fee in the trade window. I agree NEVER do this unless you discussed it. But that is how I work. Leatherworking is a rather thankless profession so if they don't want to pay the fee I charge it doesn't hurt me any to walk away.
This for me too....5% of AH prices to craft 245 lvl patterns, 3% of 226 items otherwise it's an insult for someone who has spent time and money learning a Profession. As I posted in another thread, the person has two options, pay or walk. I also want to add, I screen shot the conversation so if someone gets !@#$y, guess what, lets talk to a GM and get it settled. I haven't lost one yet....
It's called a profession for a reason. If this was all about "tips" then lets start calling it "hobbies".

My main is a maxed LWer with tons of 226 and 245 LWing patterns.
First off, I don't advertise. If someeon is looking for something in particular, I'll whisper them with the recipe link and my crafting fee.
Second, I charge based on iLvl: 226 is 75g, and 245 is 150g. I won't even waste my time responding to lesser items or requests to link my prof; know what the f__k you want, and don't waste my time.
I also charge a flat 25g travel fee, so you'd better be willing to travel, because unless I have a reason to go where you are, you're gonna pay for it. That's if I'm even in the mood to; I may tell you come to me or find someone else.
It sounds harsh, but really, I don't give a rat's hairy backside. I spent a lot of time and a fair amount of gold getting to that point. I gave up getting gear in a couple cases so that I could get first shot at those patterns.
I will not do it for what the craftee thinks is fair; 99% of them wouldn't tip or would put up a paltry 2g, thinking that I'm there to server them.
Uh-uh, boyo, my way or no way, and If they don't like that, they can get their asses in ToC and roll on the patterns, 'cause nobody rides for free.
