I know that Blizz will most likely just leave DK lore behind after WotLK, but I would like to see them evolve into a more "benevolent" form of runic magic users, a profession that some could even choose by choice.WoW is plenty good-guy-ified as it is. Leave the Death Knights alone, they're fine. They don't need to be "more benevolent."

Neither the Death Knights, nor the Forsaken use the Lich King's energies to keep themselves "alive". Both types of walking dead use their own undeath energy, which sustains them - the Lich King provided only the initial "kick". So neither should change after this death, I think.

I think they will stay the same, but due to Worgen and Goblin the starting quests will need to change.
You will start off at Ebon Hold, and talk to Darion Mograin (replacing lich king). He will tell you that the Scarlet Onslaught has re-emerged down below. You are sent down and get the same, or near enough the same quest, barr per say, saving koltira and killing the family friend beside the church. You attack them with the frostbrood vanquisher and return to learn the are lunching an attack at lights hope. This it is 300 against the 10,000 Scarlet Onslaught and you help defend Lights Hope. Then an old figure emerges, Renault Mograine, leading the Onslaught. Darion confronts and low and behold they fight.
I have two endings for this
Ending 1: Ranault takes out Darion, and hoping Tirion doesnt die, Renault gets beaten back by him and the Scarlet Onslaught retreat. You are then sent to Stormwind/Orgrimmar to tell Varian/Thrall of the events
Ending 2: Since it is Cataclysm, during Renault and Darion's fight, a huge earthquake, followed by black dragon attacks interrupt the fight and Deathwings voice booms out about his return. The Scarlet Onslaught retreat after the earthquake kills/injures Renault and you are then sent to Stormwind/Orgrimmar to tell Varian/Thrall of the events

Frost
: These should become close to their shamanistic roots, utilizing runic energy to create a mid-range combat style based on instant cast AoEs.
Blood
: Blood death knights, in my opinion, should become more like "life knights". I would like to see them becoming the primary tank spec, healing themselves an their allies, and also using healing done to them to increase damage.
Possibly some ally with the red dragonflight, seeking to remove the curse of unlife permanently.
Unholy
: Maintaining the sinister mantle of death knight, In my vision, unholy DKs post WotLK epitomize the boundaries between life, death, and undeath. Possibly, they could have skills where they mirror the black knight, gradually losing corporeal form. Unholy would be the most fragile spec, more like an assassin than the other two.
Overall, I would like to see the DK class, my fave in terms of gameplay, become viable post WotLK. I think that a new type of death knights should emerge, which some characters in lore would choose to become by choice, just like becoming a mage or druid.
Otherwise, with the death of the lich king, their would be no new dks.

NB there is a similar situation with Forsaken.
Since when do deathknights have a shamanistic background? Maybe the 1st generation of DK's that Gul'dan raised, but the current DK's have nothing to do with shamanism. The 1st generation were fallen warlocks, and were of a traditional necromancer/spellcaster type dk, unlike the current DK's which are more melee based. But before the warlocks became warlocks, they were shaman. But the elemental spirits will never accept DK's. Just my 2 cents.
The Lich King is half shaman (Corrupt) half Death Knight and control over frost is very elemental. Also realize Cata is almost completely "New stuff" based, so it could easily change. Since when have Taurens had paladins?

benevolent was the wrong word, just to stop the class from becoming obsolete, they must disassociate dks from the scourge.
But you just said, in that same post, you want a "more acceptable method of learning their art." That's exactly what I'm saying is unnecessary.
Let the Death Knights be a little edgier and more of a moral "dark gray". WoW has precious little of that as it is (as far as player-controlled races/factions/characters, at any rate).

There are plenty of moral gray shades in wow, but they tend toward the lighter end of the spectrum. Excuses and rationalizations--many of which are even valid--for the behavior of every single race you listed there are routinely made, both by Blizzard in the lore and by the players as well. You could say nearly every playable race in WoW is morally gray, but only the Forsaken really approach the "dark gray" end, and even then only barely so.
As far as the classes you listed, only the rogue and warlock are dark gray. Mages and the arcane are most certainly not -- the whole corrupting influence thing alone is not enough to make it that. Warriors are far too generic to lump into the dark gray category, even with a "sometimes" label.
Rogues and warlocks are better examples of dark gray, but those are two classes out of nine--less than a third of the original nine classes this game had. Adding Death Knights to that list was a welcome addition, and now you want them to be "more acceptable." A completely unnecessary and unwarranted change.
