Just learn to say no, bro. It sucks, and I wound up leaving a guild I really loved for this reason. I don't mind helping people out when I can, but actually carrying guild members from 1-80 (especially when they're not new to the game) is just a complete waste and benefits no one.
Anyway, if you want to take advantage of everything being in a guild offers when Cata hits, you'll need to learn to say "no, sorry, I don't have time right now." But try to set aside time to help when you can, too. It's a give and take, just make sure you're not being taken advantage of.

Well you should join a guild like mine, we have a leveling guild for our alts 1-79, and our main guild has about 130+ all 80s.
Most help you'd be asked for would be for raiding/heroics. =)
I must say we've had a lot of rough patches in this guild, but it always seems to land back on it's feet. I've been in the guild since BC when my first 70 was badly geared.

My main has been in exactly 3 guilds. The first one I /gquit after I found out what the initials in the name stood for (don't ask), the second one I founded for extra storage (which has been passed to an alt), and the third one I joined at around level 78 for access to groups for end-game content. I have since left this guild because it is dying a slow and painful death, which is frankly depressing.
Most of my levelling has been done solo, grouping for the odd instance. When I encountered other players of my level that I really enjoyed running with, I added them to my friends list.
As I got to know people better, my friends list became my defacto guild. I was invited to chat on a couple of different private guild channels, and the experience became even more like being in a guild, but without the responsibilities of such.
If you are looking for the social and networking aspects of guild life, but want to keep your distance, I recommend this method.
Besides which, people guild hop so often that it is the personal relationships you want to foster, more than guild relationships, in my opinion.

I really wish I could find a guild like that, I mean even if I refuse to run a heroic at that specific time, I can easily be replaced.
Yeah, that's basically how it goes, we have heroics during the day/old world raids if we're bored and 25 mans at night.

Are any of you guildless and happy?
Yes. My current main is level 80, has never been in a guild, and I'm content to keep it that way.
I've always been terrible at telling people no, and considering I normally play healers... well I think you can see where that's going. I hated logging in and feeling obligated to go help everyone else, or feeling guilty when I didn't log in because people needed me to help them with runs. Unfortunately that leads right to a nasty case of burnout.
Now don't get me wrong, I love helping people. It makes me feel all warm and fuzzy inside. I love running instances too. But I also need time to get organized, get my dailies in, and I love fishing. (I'm seriously OCD about being organized in game - logging in and going straight to an instance is torture for me.)
I'm lucky enough to have a great group of friends that I run with regularly, so I'm not often left searching for a pug. I've never had problems finding one though. My current schedule doesn't allow me to raid, but I didn't have a problem doing so when I had the time. I'm never going to be on the bleeding edge of things without a guild, but I'm ok with that.
Long story short, the guildless thing has worked out pretty well for me. This particular character will probably never have a guild (though I won't level her to 85). Come expansion time though, I plan to start fresh and will probably start looking for one. I do miss the social aspect if nothing else.
