WoW is generic enough in it's genre, what more do you want?
Oh yea let go and take all non generic aspects in a generic MMO and make them generic!
Also, some of what you said have already applied. And most are factored in by the skill and ability of each individual players controlling those characters.

Pallys were actually defensive and not big damage dealers
and Shaman used to be the Offensive version of the Paladin.

Rogues by all means should openly molest those that wear cloth. Melee > lesser armors such as leather and cloth.
This already happens. Ask any cloth wearer.
Mages should rock plate wearing classes, due to the lack of physical damage that is needed to get through the armor.
A slightly retarded mage can own any warrior. A good mage should be able to own a paladin and dk.
Melee-plate classes should, if able to get close enough, rock players with white damage and receive little to any physical damage taken.

Paladins should be a challenge to kill, due to being such a defensive class, and deal out mediocre damage. Less than a warrior.

A characters dps should depend on their gear and skill and not because they rolled a certain class.
Warriors HP should far outweigh other classes even if they aren't tanking. And deal much more melee damage.
A dps warrior has more hp that any other dps in the game atm. MS+hamstring+bladestorm=win?
Warlocks DoTs should hit harder than a priests and not as hard as a mage.
Again it should depend on gear and skill.
Priests should be life drainers, not healing versions of warlocks.
If your talking about how shadowpriest are a second rate affliction warlock then yes i agree with you.
Rogues should be quick, cunning, and defiantly not be able to melee as hard as they do. They're using daggers and one-handers for damns sake. Their skills should be as the name implies: stealthy and dexterous characters able to disarm traps, pick locks, and perform back-stabs from hiding.
They kinda already do most of that except for the part about doing less damage. I do agree that rogues damage is a little insane against certain classes but the same goes for alot of other classes.
Hunters should be stealthy, difficult to spot and difficult to get near. I'm not sure that i know of any other game with a 'hunter' class, that doesn't give the player a way to sneak around. Surely an animal would hear the person come running up to get in range and be gone way before hand.
Are you asking for a ranged rogue?
Shamans should defiantly not be able to take on a melee class, and outmatch them. They are defined as healing and enhancing characters. A supportive class if i may. While also being able to damage the combative abilities of their foe via spiritual spells.

Mages. Master of magic/sorcery. Illusionists. Elemental benders. Mages should take ridiculous amounts of damage via melee, while also doing an immense amount of damage through their spells.
This is already fact.
One class should out-weigh another, giving it the reason it is to be chosen. Where as there should be a class that out-weighs it as well.
Nope. Rock/paper/scissors gameplay is annoying.
Is this game completely balanced? No. Is this game more balanced now than it ever was? Yes.
