There are a few things to consider when leveling:
Downtime sucks. For me it's the worst thing in the game. This includes regeneration downtime as well as downtime due to travel.
Druids and Shamans get faster travel at lvl 20, Warlocks and Paladins get a free mount at lvl 30 (which is good for your first character since you will most likely not have to gold to buy a mount that early).
Druids have no downtime at all when leveling (as feral) since they regenerate mana while in feral form and can then heal themselves from a full mana pool whenever necessary. Shamans have the water shield which reduces downtime. All other classes either have issues with mana reg (Paladins and Priests) or can't properly heal themselves, resulting in HP-reg downtime.
As for the lvl 80 play I generally like classes that can heal so I never have a problem to find a raid group. Being a tank would also help with that but tanks are way more gear dependent then healers so you can't tank unless you got awesome gear but you don't get awesome gear without tanking ...
I also prefer classes that have a priority list and no casting rotation. Mindless button-smashing just isn't fun in the long run.
So I tried many classes and so far Druids and Shamans are the ones I like best. The Druid is my Alliance (and overall) main, the Shaman is my Horde main character.
This is a short overview of my experience with the different classes:
Druids - Great, extremely flexible, very fun to play with stealth as cat form. Seriously, stealth is totally awesome. But healing is too, that's why I like Druids better then Rogues.
Rogue - Didn't really try it much, Druids have stealth already and Rogues don't really offer anything new for me.
Warlock - The class I initially started with. Stopped playing it because I hate the pet mechanic in WoW. Waiting for the pet to get aggro is annoying, my Druid can kill the mob in that time.
Hunter - Never played one since I didn't like the Warlock pet mechanic.
Death Knight - The style is interesting, kind of like (enhancement) Shamans, instant cast spells that scale with attack power. However, the spells have a fixed rotation so in the end I only use one button (macro) which I have to press 10 times in a row. It doesn't get more boring.
Warrior - Basically the same as a Death Knight. Theoretically his attack skills and the DK spells are different in the mechanic, practically they work exactly the same way. I don't see a reason to make a Warrior when I can start a DK at lvl 58 and spare me the annoying 1-40 part of leveling. DKs also have better self-heal which makes leveling easier.
Mage - All the drinking is just soo annoying. Fun to play while he has mana but drinking all the time totally ruined it for me.
Priest - Less drinking then Mage, overall a very fun class. My 3rd favorite after Druid and Shaman. Still some drinking necessary (with the recent mana reg nerf) which is a bit annoying.
Paladin - They sound like an awesome class and I'd very much recomment considering them. They are the only class in the game besides Druids that can tank, DPS and heal. I never tried one because they are too "holy" for my taste. Priests at least have shadow magic, Paladins just do everything the holy way which I find a bit boring. Additionally they seem to be a rotation-based class (as opposed to priority lists mentioned earlier) which I don't like that much.
Shaman - Finally ;) Fun to play. Has all the melee power one could ever want, is kind of unique with his shock spells. 30% of AP as SP offers some very interesting possibilities. Dual wield looks great. If Shamans could tank they's probably be my favorite class. As DPS I like them even more then Druids, for healing I don't have enough experience to compare the two classes but I can't imagine a Shaman being more fun to heal with then a Druid.
The single best thing about Shamans I'd say is Earth Shock. Being able to interrupt spells while dealing good damage is so much fun. No annoying self-healing mobs anymore that get their heal off right before they are supposed to die.
Short version:
The classes I find most interesting are healing classes, Druid, Shaman, Priest and Paladin.
Druids offer the most flexibility, followed by Paladins. I don't like Paladins for RP reasons and I don't like the downtime when playing as a Priest. Additionally I enjoy melee a bit more then casting (mainly because it has less downtime) so Druid and Shaman are the two classes for me.
I chose Druid as my main since he can also tank, as far as leveling goes I'd say Shaman is even a bit more fun, mainly because Earth Shock (spell interruption) is awesome.
