I was looking ahead to dual-spec for a while before it came out, and while I was tanking for heroics with my pally, I picked up several pieces of healing plate. Let's face it. it's easy to put together a group with only one plate-wearer who could possibly need +int and +spellpower. Not that I excluded other pallies intentionally, it just often worked out that way.
I went as off-tank on some raids, and got a few pieces of healer gear.
If you find you don't pick up many items for your off set by rolling greed for off-spec, try getting some of the crafted and badge items for that spec, run a few heroics as your second spec to pick up missing items/get upgrades. Then you should be ready for 10-man raids in either spec.

Craftables and rep items.
You can get a reasonable set for both specs, and then go into heroics as whatever you feel like at the time for gear for that spec.
I geared up a reasonable ret and prot set in 3 days of hitting 80.

I got geared using the same methods as my main spec:
Grinding reputation for Faction Gear.
Crafting items with my profession.
Running Heroics with a regular group.
For the heroics, we all had a main spec that we would use to roll through instances. If someone didn't need main spec, others could take for their secondary specs. What ended up happening is the tank would finish collecting gear and I could start rolling on it.

I got decent crafted/rep gear for both sets, then run heroics as whatever is needed.
Most groups do a main- need, offspec greed type roll, so you can occasionally pick up some pieces for your other spec, but mostly you run instances as the spec you are currently gearing up.
My prot spec is more called for, so I end up getting more gear on it than Ret.

When I run Naxx 10 with my guild, I ask if I can take the tanking items that the MT and OT don't need. Usually the reply is yes, unless someone else is trying to off-spec gear, in that case we roll for it.
So just ask your group. They might say yes if the tank is geared enough.

Whatever i can grab that works for either my specs i will grind rep/mats/money and purchase it.
If it's a BoP instance loot, i will roll need if it involves the current spec i am fullfilling and is an upgrade.
If it's for my other spec (the one i am not using at that time) i will ask if i can need for offspec. If they say no I will not roll.
