aoe its either a pally mage or lock. no class is the best at farming for ore and herbs although druids are for herbs since they dont have to dismount because of flight form.

Night elf druid for all such gathering purposes. You aggro anything while mining you either root or cyclone the mob, then shadowmeld and take off into flight form again.
Beasts or dragonkin you can use soothe animal on to cut down their aggro circle considerably (or hibernate them if they've already aggrod on you), soothing them first usually lets you gather that node without ending up in combat, and beasts typically are the most common mobs patrolling out in the wild...
Sounds like a LOT of trouble though, leveling a character just for the purpose of gathering stuff... :P Then again, who am I to decide how other people spend their WoW playtime? Heh.
