Ret hits hard yes, but I can't say I've got more problems with them then with other classes. Don't forget HoF is a magic buff: Tranq shot removes it. Same thing for Sacred Shield and thingys. I ussualy just scatter-trap them, get to a reasonable distance and fire 3 explo shots. Btw: You guys know or there is a way to apply wing clip without autoattacking (= without doing dmg)?

Probably a macro for
/cast winglip
/turn off attack (whatever the command is)
On my hunter i find dks really easy, but rets are harder to kite, plus once they get to u u dont last as long as u would if it was a death knight. The 15% extra run speed is very noticeable from rets, it feels more like 35% speed increase to me.
Plus they have ranged damage attacks.

By Paladin I assume you mean a Ret? Well, in a BG all I can honestly say is 'good luck', but arena is a different story. I've found that keeping out of his deadzone (The 10 yards it takes for him to throw down his HoJ) is the only way you'll live.
Never, ever, trinket out of the Repentance, save it for the HoJ. When he bubbles to heal: RUN AWAY. Get as much range as you can while he gets ready for round two.
Remember to use your surroundings to your advantage, and bear in mind you can clip his wings to slow him down even if you're in melee range.

It depends. If the pally gets close enough to the hunter before the hunter wins, then the pally will probably roflstomp. Open field? Hunter>Pally.
In a 1v1 duel? Probably the paladin.

I've had pretty close fights with the retadins I've been up against. It was open world PvP in Dragonblight, we were both 73, he jumped me when I wasn't expecting it, but I killed him. Then he came back and I let him get all healed up, we fought again, and he killed me.
I'll be honest, I don't enjoy fighting pallies or deathknights one bit. Too much armor, too much healing. Everything else I'm fine, but those two classes are a pain in the nuts.
EDIT: As a MM hunter, BM hunters are a pi$$er to fight also
