I've been playing my 80 lock for a couple of weeks now with herb/insc. I started leveling around when 3.1 came out with dual-talent, which needs a second set of glyphs. I made a lot of money even at low levels, but now the moneycurrent has settled down a bit (with the exception of Frost Lotus).
You should really take a good look on
Puroshen's thread
on profession BoP-benefits. It would seem to me that BS & JC would be the way to go for PvP, IF you can afford it or have the time to farm for the extra prof and abandoning mining later.
If I'd have the time to skill tailoring & enchanting, I'd choose it over inscription. The new high-end raiding BoE-item recipes from ulduar are incredible.

Orcs also have a +5% increase to their pets damage also, don't forget about that. That racial alone is probably why a lot of people roll Orc Warlocks. I personally don't think they look that awesome in Cloth Armor either. I rolled a Blood Elf Warlock simply because of their looks. I know their racials suck for just about any class, but they definitely look cool in any type of armor also.
I have a great idea that would buff up the BE racials a bit.
They have a lot of class options that use daggers. As far as I know, there's no race that has + dagger specialization. I think, since BE's can be Warlocks and Rogues and such, it'd be awesome to get a +Spellpower or Attack Power benefit from having a Dagger. It'd really help out their awful racials IMO.

Blood Elf racials are AMAZING in PvP. Also, Macro Arcane Torrent into Lifetap... Every two minute you get an extra % of your mana back when you tap ;)

Race: I just love Orcs. Especially female, but go with what you like. Just remember that if you go Undead or Blood Elf, you're just another Undead or Blood Elf Warlock, I personally like to be more individual, but that's just me.
Tree: I haven't tried Afflic or Destro since WotLK, so I'm not an expert, but from what I understand, all three trees are decent for PvE and PvP, although I'm partial to Demo. Again though, that's just me.
Also, I've heard from several sources that Ench/JC is the best prof combo, although JC is getting nerfed soon.

Do what you want.
None of the racials make or break the class; neither do profession choice depending on what your future goal is. If it's for min/maxing dps in raids at end game, your choice should be bs/jc. If it's for making money on a new server, mining/herbing/skinning is your best bet.
If you don't care about money that much, and want profs that are decently easy to lvl up with each other and provide decent ups, tailoring/enchanting is fine.
All trees are viable in end game if you know how to spec and how to play.
Destro and/or Aff are the top pvp specs atm, with demo being ok in bg's and very rarely in arenas due to being made completely null by pallys/locks, and any class that can burst the felguard down (which isn't too difficult). Also, add to the fact their main skill (meta) is used for 30~ seconds every 2~ minutes, they're basically a hit it or die spec at best, and at worst, completely useless.

If a race has a proficiency with a weapon, it only increases the base dmg ever so slightly I believe. It doesn't increase the other stats on it at all, otherwise it'd be entirely too op.

a question to everyone: are good glyphs rare and expensive and hard to get without having the profession?
No. GoLife Tap was expensive at the start of the new patch but even that is now way <100g, and I play on highly populated servers with inflation.

For end game raiding tailoring + enchanting is better. You get nothing out of herbalism.
For leveling however the herbalism heal is really nice to have.
