JC is above and beyond the best profession for your self-buff. 3 prismatic gems, if used correctly, far outweight the other profession bonuses.
However, for easy grinding, skinning is the easiest. You don't have to hunt down nodes, you just mow through mobs. Takes less than a day to do, and you can sell all the stuff you get from doing it (except for certain hides).

Apparently JC is getting nerfed - the Gems are no longer completely prismatic.
