are you trying to level? do you have other charcters to send money to this charecter?
if you need money minning/herbalisim
if you want endgame raiding lw/jc
if you want someproffesion buffs yet make money,
I personally like the mining/JC the best but Herb/Alch may be better if you're bal/resto because of the extra you get from pots and stuff.
JC/Chanting or Mining/Herbing
Any gathering skill since they won't take to much time out of your leveling process and do provide extra benefits on the side.

on my druid, which is my main on a horde server, thought I have 2 80's on alliance server, I went with inscription/herbing.
Herbing is great for leveling, it has a heal spell, and it's a gathering skill which isn't as annoying to level as mining (when searching for thorium veins).
Inscription, surprisingly, is a great money maker. Professions such as blacksmithers, and the like don't make any money until maxed or close to it. And leveling them requires either a lot of money, or a lot of time spent farming mats.
For inscription, I bid/buyout cheap herbs, and make tons of glyphs. Well not tons, but usually I list about 20 different glyphs on ah, about 2 to 3 each. But I'm at 390 now, so I do have a lot of glyphs I can make.
Basically it's a profession which can make you money from almost very beginning, definitely once you can research minor glyphs, you can make good money.
But that's all from point of view of a new toon on a new server.
If you don't need money ... these professions are also good, but there are a lot of choices out there.
