This is very subjective.
If you didn't get to sit at level 70 and raid / pvp like hell, then chances are you aren't going to be very geared from 70-80. Then, if you want to do heroics, you'll be hassled because your gear sucks, you won't get runs, you won't be able to raid, and pvping will take forever working from the ground up.
Craftables are perfect for that. That's what they're for. They'll be replaced fairly quickly once you CAN get into a heroic / raid.

So what I think I'm hearing is, I will eventually outgrow tailoring, but it will be good for getting my foot in the door?
For your own uses as far as a level 80 goes, yes, exactly.

pretty much, yes.
If you want a profession for pure raid dps, chanting/alchemy is probably your best bet

The tailoring proc is up almost all the time for me (when I look at my procs that is, I'm not factoring in the ICD).
I'm glad I kept tailoring now that I think about it.
