Very interesting dilemma you have!
I would be very careful with this decision. Looking towards the future, one must consider the irreversible long-term effects of selecting a race.
In particular, you have a priest that has, let's face it, no skin. Or, at least, minimal protection against the delicate soft tissues. There are at least two significant problems with this. First, infection. Now, being a healer, this is something that won't be devastating, but I can tell you that you must always stay on top of it.
The second and perhaps more important problem is social. Much as we like to believe that looks don't count, they do. And what priest with half-melted skin, eye sockets bulging with dead tissue, and posture that screams NEED CHIROPRACTIC HELP will be able to attract and keep a mate? Honestly. Your sexy title might convey a sense of power and security to potential mates, but when you hit 80, that title says "old school." You really need Twilight Vanquisher to impress the c.ocktail set these days.
Go human.
As for heirlooms, it's not just the 10% bonus from shoulders that you'll get. It's all the bonus spellpower, crit, and mana from the weapon and trinket. Very good stuff for a leveling HUMAN priest. I heirloom-leveled a mage (just 1-20) and it was a joy. Get a few good enchants on your gear, and you'll be amazed at how much more powerful & survivable your HUMAN priest will be.
Professions: if you want money, gather. If you want end-game stat bonuses, go JC/enchanting. There's a great thread in the profs forum that lists the end-game value of each profession.
Edit: Unbelievable. You can't write out c.ocktail. Hmmf.

after leveling two toons 70-80 without heirlooms, then 2 more 70-80 and one 55-80 with the heirlooms i would say, it makes a HUGE difference, and i didnt level my priest with the heirlooms, but with my other characters anytime i found shoudlers they were on par with the heirloom stats until 80, and they dont only apply to killing xp now, they also add 10% to the xp you get from quests, which is very yummy when you realy think of just how high those numbers get from quest xp as you level
now since bc level to 29 is amazingly easier, with the heirlooms and with the one patch that made 20-60 much easier, so i guess id say first look into both servers. how fast do they progress, how overpriced is the AH usually, do you know people you like on the server, how is their pvp battlegroup, ect.
If both are about the same, id say go with the one that can get you the heirlooms
for proffesions, if you dont want jc and only want to choose from what youve said, id go herbing/alch, i had tailoring on three toons and dropped it on all of them with wotlk, with everything being boe i didnt really think tailoring was worth it compared to other proffesions, you can make tons of money selling herbs, and as a priest you will end up going threw lots of mana pots, and if your looking to make gold off your proffesions, people always need flasks/pots/xmutes because they are consumables and constantly need replaced, id say go flask or pot spec, not xmute, persanolly i went pot spec with my dk so i could make all my priests mana pots and i find less pot specs than elixir specs, however elixirs will be needed by more people
as far as holy/shaodw, i leveled my priest just fine as holy and went shadow for 2 levels and didnt really care for it, however ive heard others say how they couldnt stand leveling holy, keep in mind in the lower instances you can heal just fine as shadow, you even can in the higher instance, just not nearly as effectively, and now at 40 (50?) you can buy dual spec for shadow/holy, and the gold shouldnt be too hard to farm if you have a level 80 on the realm (assuming you went with the human), id say just try out shadow and holy and see which you like more

here is my mage fully hierloomed. I would link my low lvl priest who is 40 odd but i transfered they items over to mess about on the mage..
heirlooms make a huge difference if you have those two trinkets. spirit tap took a huge knock, so having 4% mana returned per kill is brilliant. The weapons got a much needed boost and the 30 sp enchant still works.
take them, you can always use them again whenever you need to.
