1. Feral Druid. (cuz I play one, not sure if its THE best, still damn good)
2. Pally of any spec.
3. DK
4. Probably hunter
5. Rogue (lulz, stealth run)
6. Warrior/shaman with decent gear.
7. Clothies will get stomped most likely, but who knows.

I have tried several times for the Baron's mount in Stratholme, with my protection paladin.
I think that class works very well for the purpose due to wearing plate (I don't take much damage) and having specific spells that are targeted toward undead.
Another class that would work well is rogue, due to being able to pick the lock at the back entrance, and stealth past just about everything. Once you get to the Baron's front gate, you just open all the crates, waltz on past the big poofy guys, and take out the head honcho himself.
Exit, reset, repeat if desired. ;-)

You should have the key after clearing it once. And the doors you're talking about can't be picked. They're not interactive. You'd still need to clear the zigurats out and kill the poofy guys.
Yes, any class should get the key after clearing the place once, but to avoid that first "full clear" for the key, a rogue with lockpicking is the way to go.
I did not say the doors can be picked. I said you *open all the crates* in each area. Doing so will unlock the gates even if you do not clear the area or kill a single boss.
I run through there with my paladin only killing mobs that are too close to a crate, and the baron. Never touch a ziggurat or a poofy guy once.
