WoW itself doesn't exactly download much at all. I can't remember exact numbers, but it shouldn't put you over a 5GB limit.
If you stand in crowded areas all down, you will download more than if you stood in a deserted place.
Ventrilo on the other hand, has the potential to download a lot, depending on the settings of the server you connect to.
If the settings are set for the clearest quality sound, you will download a lot more than less-quality sound.

I just did a bit of testing myself.
WoW seems to take roughly 5 kbps of bandwidth and running any realtime sound streaming (vent, internet radio) about the same. Other sources I've seen state similar numbers.
If you have 5 gb per month (?) to use, that is an average of 2 kbps you could use if you were online 100% of the time (I hope you aren't). It also means you could spend 4-5 hours every day raiding (assuming a figure of 10 kbps) before going over the limit.
tldr: You'll be fine as long as you don't raid 24/7.
