You do the dailies, you do the first set of quests (3 days worth) to get valiant, then you do the quests until you get 25 of the tokens which you hand in to become a champion for that faction. Once you have one champion you can do the old set of dailies for a new faction, to get a second title and you can do a new set of dailies, which reward the champions seal. I believe it's 5 seals per day (someone will correct me if I'm wrong) and a pet requires 40. It takes 3 days to start, then 5 days to get the first champion title and then I would assume a further 8 days per pet, assuming you do all the dailies every day.
I think that's right, but I'm sure there is further information if you search for Champion's Seal or I'm sure there is a tournament guide on here somewhere.
Hypothetically in the time that it takes any level 80 should feasibly be able to farm 3k gold elsewhere. Also allow for the fact that only the few pet-hunters will pay for the opposite factions pets at high amounts. As the most serious people on the server buy them, the price will go down, as a lot of people will not be willing to spend the gold on a companion pet unless they're working towards the end achievement for them. But the dailies do reward good gold too.
