lol i do exactly the contrary, im just trying to get the best avoidance i can, even if i dont have a lot HP .
i think that for the moment im at 30% dodge et 20% parry with all spell buffs, and i find that really fine, better than having 40k hp and being hit every time.

Then /kick the healer and get another.
While i do just like igisstrength said, gemming for avoidance more than other (i don't really look after expertise, with just the points i get from normal gear i find myself almost never failing a hit), i try to keep a balance with stamina (normally balancing by looking to socket bonuses - e.g. if there's a blue socket with a +stam bonus on it, that's *asking* you to throw a stamina gem on it).
Even though i tend more to dodge than others, i've never had such problems with healers, instead, i've made their life easier since they had to waste less mana on me, and they didn't have to be desperate when there were bosses hitting for a heavy load of damage, since my dodge chance normally gives them time to heal me completely and do something else useful - which they couldn't do if they had to spam greater heal because i had no avoidance in favor of stamina.
On another point i feel like adding, avoidance instead of stamina comes very handy in a lot of encounters where they play with your health in percentages, such as Gluth in Naxxramas.
When decimated, taking or not taking a hit while healers are bringing everyone back to 100%, could make the difference.

Never heard of diminishing returns on dodge and parry?
Go read up on effective health theory, stamina is simply your best option for survivability. While you say it's better than having 40k health and being hit every time, it really isn't, you have a 50% combined dodge and parry chance... that gives you a 25% chance of being hit twice in a row, 12.5% chance of being hit 3 times in a row. When that happens, your healers will have a REALLY hard time keeping you up when considering hard hitting enemies. It also gives you no protection against magical damage.
It's not as if you pick "I'm going to stack stamina" and instantly lose all your dodge and parry; you can maintain good amounts of both just through what's passively on the gear you own, without losing itemisation points as the result of diminishing returns. With a full compliment of raid buffs, I'm sitting at 44k health, around 25% dodge and 22% parry with no conscious effort to obtain these stats.

In raids the tankhealers are spamhealing you most of the time anyway, so it's not like stacking avoidance will lower their mana usage.
I'm telling you this as a healer, get a large hp pool!
Think about all the bosses that have a soft enrage, it's gonna be a nightmare keeping you up if you don't have enough hp.

Dodge > Parry any day of the week.
You need 49% parry rating for 1% parry and 39% dodge rating = 1% dodge.
Diminishing returns only makes parry rating = dodge rating at around 1000 dodge rating and 0 parry.
It is not currently realistic to achieve this in game.
Although parry does grant you the chance of a melee haste bonus you must remember: For threat gems Expertise or Expertise/Stamina wins everytime but a huge margin.
Blue Sockets
Stamina. Socket these with stamina always unless you a) need them for the defense cap or b) your gear is stupidly good and you want stat X instead.
Red Sockets
Dodge/Stamina gems for avoidance.
Expertise/Stamina gems for threat.
Yellow Sockets
Defense/Stamina for avoidance.
Hit/Stamina for threat.
I cringe every time I see a tank with +parry gems...

as druid tank agility > dodge even before we had the crit stike bounous
the reasoning
dodge gives you more without buff but when you add in kings, it increases how much agility the gem gives you giving you the same amount of dodge as the dodge gem, plus it gives you the extra amor.

Would love to see an armory of your stats unbuffed to reach 30% dodge and 20% parry raid buffed.

In my max avoidance gear I'm at 29.66% dodge and 19.63% parry unbuffed. This is still all gemmed for stamina, with Dodge/Stam in red and Def/Stam in yellow. I could certainly get more by re-gemming. As it is now, in that set I'm at 24393 armor and 30311 health unbuffed, 200 hit and 6 expertise.
Not that I ever use that gearset though. My normal boss tanking set is 25.77% dodge, 19.40% parry, 263 hit, 27 expertise, 24682 armor and 32301 health unbuffed.
