Paladins level ridiculously easy if you put the time into them and know what you are doing. I'm leveling my own paladin and have put out 11 levels in the last two days of play time (2-3 hours each day) because I am able to solo the majority of group quests and kill mobs 3-4 levels higher than me without any real difficulty. I'd say waiting for your rested XP bar to go up would be a waste of time. It's a nice thing to have, but you can still level effectively without it.

I would advise against the rested xp approach. Rested xp is a great thing to have, but it won't help you to wait for it to build up then play until you are out. Just play how you want to and in the end you'll still be getting rest xp while you aren't playing at the same time that you are jumping levels. Like it was mentioned before, quest xp doesn't benefit from rest and that contributes a large amount if not the majority of your xp while leveling.
If you think about it, you'll technically receive the same rested xp over a few day period no matter if you log on for 2 hours a day or not. The difference is you'll be using up that rest xp each day and not letting it build. So just log out in town or in an inn and you'll level up just fine.
I've had issues with quest helper in the past so I switched to carbonite which I find is a much better quest addon.

what i have seen people do is level several characters simultaneously and just rotate them so that they are always using one with rest xp
