Not sure if they still work, but there used to be addons that would rapidly switch your tracking back and forth. I vaguely recall, however, that these got nerfed in 3.1
If that's the case the following macro will switch between your two tracking spells, but you'll have to hit it manually every time.

I just never have Herbalism and mining on the same character. If I have two gathering professions, I make one of them skinning.

Nah, silly would be having, say, Mining,Herblism, AND fishing tracking to try to use all at once, without using Spotter.
