Dropping herbalism, having trouble with Talor vs. JC

That's my armory. Currently I've got Alchemy/Herbalism, but two of my alts also have Herbalism, and so I've decided to drop Herb. on my mage and pick up either Tailoring or JC.
Now, it's probably obvious why the choice has come down to the two of those professions, so I won't go on about the reasons why, but rather straight to my question.
Tailoring has that awesome cloak enchant, which is what I'm primarily focused on (I know I can get sweet BoE recipes from Ulduar, but my guild isn't doing U25 yet ), and I believe the cloak's procs work out to around 83.333 spell power, or was it DPS? (I think I might be a bit off there).
Comparing that with JC, which eliminates the need for blue gems (+23 SP, -8 Spirit per blue gem replaced, and +13 SP/+23 SP -8 Haste for the one red/orange gem I'd replace) with Runed Dragon's Eyes. That works out to +65/+75 SP and -16 Spirit/+ -8 Haste total from the Dragon's Eyes.
So, which should I choose? I'm leaning towards tailoring, but it's still a really tough choice.

Jewelcrafting is the superior profession; but without a miner in your reprotoire, it's going to cost you a bucketload to level it.

If you have any interest in maximizing your dps... go JC over any other prof. If you can get Enchanting, Blacksmithing, or even engineering to complement it, that would be optimal

as has been said, they both offer good, serious, comparable benefits.. levelling them both is hard, but levelling tailoring is probably a bit easier when you're 80 since you can just go grind older instances to get cloth.
besides.. being able to make bags for any alts you may want friggin rocks. there's just no words for how hard it rocks. makes those first 10-15 levels go tons faster.
JC is hard to level, and as was pointed out, if you dont have a miner will be hellaciously expensive. However, it's also a better moneymaker in the end.. people will always need to upgrade their gems with their new gear. and buying uncut gems from the AH is always cheaper in the end than buying cut ones.

tailroing in wrath is not very profitable, but the lightweave is worth it in my opinion., also, the additional cloth you get from mobs will add up into some profitability in the long run, as cloth will always sell.
during tbc i used to make around 100g / day crafting epics for people with tailoring, those days have not returned as yet, there are some nice patterns from ulduar but there arent really enough orbs floating around yet to have people requesting these items crafted a lot. Ulduar Nerf is inc tho so we should see a lot more scrubs with orbs wanting decent grear crafted

what's this about an ulduar nerf? where'd you hear that from?
other than that, sadly, what dread says is true.. tailoring isn't very profitable.. i've spent more money levelling it from 375-431 in LK than i've made on it my entire wow career as a tailor.. i'm seriously considering droping it for enchanting or JC (since he's a miner).... even with sacrificing the lightweave on my cloak....
Ulduar patterns are out there, but like dread said, they're ridiculously rare, and even more ridiculously expensive to make (since runed orbs are going for an average of 1200g on my server)... Don't pick tailoring hoping to make some money out of it.

holy #$%^e dread... that's something i'd heard nothing about..... although, granted, i almost never go to the official wow website and look at patch notes unless it's after a patch and i want to look at some more information on specific things. Thanks for the wall o'text there..
And as dread said, if someone can confirm/deny this and put a source up, i'd be much appreciative.
