I face a simular issue right now. I've had one of every class as some point or another and the ones I play now are the most fun to me.
Warriors do Great DPS if you level them in royalty or dungeon alot.
Druids as you said, epic fail, until 30+ or higher...
Mages are too much of a PVP-Target for me.
Hunters are one-button-wonders--boring!
Have you considered a Rogue? Fun to level all around.
Assasination for daggers and stabbing people.
Combat for sustained dps. <<-- The way to go.
Sublety for ambush killing things!

Well, I really enjoy playing my paladin, so I can't sympathize there. I haven't played my hunter in ages. It doesn't seem that fun to me. Pet attack. Shoot shoot shoot. Pet attack. Shoot shoot shoot. It bores me. She's level 72 and it may be a while before she gets to 80.
Since you seem to find druids and mages interesting and you want to have fun "in the long run" I wouldn't worry too much about early leveling. Yeah, it gets *more* fun at level 20 or 30, but how are they at 80?
It seems to me druids have the most choices at 80 of any class.
Bear form tank
Cat form melee DPS
Boomkin ranged spell DPS
Tree form healer
If you want variety, it looks like druid will give you the most bang for your buck, even if leveling those first few levels is a chore. Can you find a buddy to re-roll with you? Group questing can improve the leveling experience, especially if one "tanks" and the other DPS and tosses out a heal every so often.

Pro's: Yay! Fire!, insane DPS, many big explosions.
Con's: Leveling sucks until level 20.

1-80, including 1-20....
Fire is not a great leveling spec, altho its viable aqnd can be more fun, frost will be the best, and its super fun
Real Pro's:
Range of leveling ways, since any spec is viable, yet some pwn more than others
Portals
Food
CC
Great in groups/usefull buffs
AoE
Can solo anything easily, even some group things
Blink can be more usefull than you think
Real Con's
Squishy (Not nescesarily low survivability, just squishy, survivability depends on spec and skill, i never died solo on my frost mage)
Requires no skill to play and have fun, but requires skill to master, specially frost if you want to efectively solo harder &*!@ by kiting
Little demand in groups (as with all dps)
A lot of conpetition over gear
%^&*!@#s demanding food or ports can get on your nerves, but nice ppl asking for such will bring you nice extra cash

Druids and Pallys are easy to choose.
You can choose if you want to do healer tank or dps anytime.
If you choose hunter you stab yourself cos sometimes your really get bored. dps onmly

Isn't this really how every class is? Find something that works and stick with it.
So far I have leveled a druid and hunter to 80, mage to 76 and paladin to 31. I am currently in the process of leveling the paladin further.
Druid: Wrath, Root, Wrathwrath. Alternatively, starfire is added into the mix.
Hunter: Pet attack, auot shot.
Mage: Frostbolt repeated.
Paladin: Exorcism, judgement, white hit, dead mob.
Every class recycles their attacks over and over again until they reach max level. To be honest though, I had the most fun leveling a hunter.
As far as leveling a druid goes, I did 1-70 as cat and was resto at 70. Upon WotLK, I switched to Balance and leveled to 80. I quickly got bored and stopped playing it as much. Balance
can
have mana issues so feral is probably the quickest and most effective way of leveling. Neither balance nor feral are particularly difficult.
