I think you just described every American city's Chamber of Commerce.
If putting it on the AH for a really low price makes them undercut you, you've made them lose money. Just make sure it's as low as the market will bear.

in my server i'm pretty sure we have a reasonably active population of goldfarmers as well...
From what i've seen, actual Ni Hao Gold Farmers are quite rare nowadays. Ni Hao Hackers are very common though. They've learned that they can make alot more gold in alot less time by hacking accounts, and mailing off the gold/mats.

Thing is, I would, ofc, just stick the stuff in the AH, but what tends to happen then is that it gets dramatically undercut by one of these jokers.
They're fighting to control their niches in the market. You'll have to watch them to see what their staying power is. Are they pure bankers? And therefore constrained by the mats costs on the AH? Or are they farmers and only constrained by the vendor mats costs?
As a farmer (with 3 of the 4 gather professions), you have the option of cutting the price all the way to the vendor costs (plus AH fees) .. basically forever.
If you think you can compete in the niche, you have to find ways to fight these guys.
Big layout items .. make multiples. AH one for "full value" .. watch them undercut you, then undercut them. Make sure you're able to keep up the war for a while; by making more. Otherwise, they'll buy your 2nd one and stash it until you leave the market.
Or, as long as you're making a decent profit on the discount price, let them keep buying you out.
The only way to force them out of the niche, is to keep getting their auctions to expire. Or continue buying yours in order for theirs to be the cheapest.
Small layout items, I'd make massive quantities and flood the market myself .. right below the mats cost.
But, in the end, to make money, you have to find a couple niches, know them really well, and fight for them (with reduced pricing/flooding) when necessary.

If they're undercutting you on the AH, just buy their lots and resell for a higher price. Eventually, they will tire of losing money, and you can then make the profit from their lots. :)

just view the price wars as another game-within-a-game - which, as you put it, is how it's meant to work, in WoW just as in RL.
I agree: the community in-game mimics that of real life a lot. Remember when the debuff Hakkar put on people's pets was spread around and killed thousands of people (wiping out entire cities)? People studied how players reacted to give them a better idea of how to handle a pandemic.

The knock on effect of this practice is that the prices in AH are all over the place, depending on what they're choosing to target at any given time, eg, somedays titansteel is 40g, other days 140g.
Is this how it's meant to work?
I love it when it works like that. Scoop up 40g titansteel bars from AH, hold onto them for a couple of days and unload at 140g on days with high prices. Fluctuating prices is a huge money maker, what's not to love about it?
