Spriests used to be able to get away with very low amounts of hit rating. For example, in BC we only needed something like 86 hit rating to be totally capped. I believe that the talents have changed since then to require more than before, but it could still be that they gain more from talents than you do.
Download and run recount, it will show you the miss rate on all your spells so you can see were you stand. There are several sources around here that show that until you are hit capped, hit is the number one stat you can use to increase your dps. It is probably worth dropping both crit and spell power to get hit capped.
Ignoring haste, FFB is a 3 second cast, if it misses, thats 3 seconds wasted with another 3 seconds to cast another one. I would argue that, while hit is very important for all casters, it is even more important for those with long cast time nukes. SPriests are mostly limited by GCD or short cast time spells, in addition much of their dps comes from DoTs which, once applied to the mob, cannot miss.

As an ex-raiding SPriest (granted back in BC), I can vouch that missing a dot application not only kills your mana efficiency, but can drop your DPS quite a bit depending on when you miss (are you letting dots drop or applying prior to they drop off etc) Either way you are missing MBs/SWDs and mind flays while you are re-applying your dots that missed.
Also, do you raid with your spriest friend? Can you verify his 4 to 5k dps with 100 hit rating? He could be eating hit food (although it wouldnt be enough to get him into the low 200's he needs to be capped), he could switch gear out for raiding, he could also be just telling you numbers on like Thaddius or Lotheb.
