Starting to level an alt, profession dilemma

I have a level 80 paladin, max eng/mining. (Yeah I know, bad for gold, but good for fun)
I have a 73 hunter with skinning/mining, spent a few days leveling both up to NR level. I will *possibly* drop mining for LW at 80.
I have a mid-30's druid with Herb/Alch, coming along nicely.
After getting the tome of polymorph: rabbit on my level 16 mage during the noblegarden event I decided maybe I should level that one up more. I got to level 19 that same afternoon, and actually enjoyed it once I figured out how to not die every 30 seconds ha!
My mage's professions are currently mining (again, sigh) and JC. I DO want to keep JC as it could be handy to have a JC alt to cut my gems for me, prospect ore, etc. I want to drop mining though. I don't really NEED another miner when I have two. I would like some opinions from those experienced with other professions, which would have more benefit for a mage, enchanting or tailoring? I know some tailoring patterns require enchanting materials, and I do not have any alts with enchanting yet, which might make it more expensive.
Acquiring low level greens to DE for mats should not be hard with a level 80 paladin for soloing instances, which same would also benefit tailoring. Need silk? Run SM for 30 minutes. Need Mageweave? Farm felwood. Need Runecloth? BRD/Stratholme for all your runecloth needs. Netherweave is stupidly easy to get too, just grind maghar rep and get enough to choke an ogre.
I have read the stickies on professions and Prof-specific BOP bonuses. I want more of an experienced opinion on leveling these professions. Thanks :)

JC + Enchant is a good combination. JC doesn't really need mining after 300 skill points anyway. You can get through your first 150 points of enchanting just from the auction house.
Buy low level greens where the DE Mats are worth more than the item and disenchant until you get over 50 (don't enchant anything yet... DE will get you over 50 by itself). Then sell mats on the AH for some profit. Use the leftovers to get yourself up to soul dust. By the time you get to the Vision Dust recipes, things start looking like crap. At that point, you're really just DEing quest rewards and drops.
