Just remember BREAD, and choose your cards in that order.
Bombs: Any cards that could almost win you the game on their own (for instance Garruk Relentless or Army of the Damned)
Removal: Any cards that will help you deal with any of your opponent's permanents
Efficiency: Any card that gives you the most bang for the least amount of mana. The more expensive cards are usually more expensive because they work in specific combos which are very hard to put together in a draft. Instead you want the 2/2 drop with first strike and some protection for instance. Most of your deck should be made of these cards.
Aggression: Any card that is quick and decisive enough to unbalance your opponent. Cheap burn spells, haste creatures, or any card that when it's down is going to be killed fast by your opponent for him to not fall behind.
Dregs: Big cards, like the bombs, but that aren't as good. You'll want one or two for late game.

If an enchantment card makes a creature unblockable, unattackable, and untargetable, is the enchantment itself targetable?

If the enchantment only says the creature is untargetable, then you can do whatever you want to the enchantment card as long as the spell you're casting can have an enchantment as its legal target (you could not cast a damage spell on it for instance).
When a spell is interrupted it goes to the graveyard unless otherwise stated. In fact nothing will ever return to your hand unless it's specifically stated.
