If you are a Herbalist, you can get
Lifeblood
, which can prove to be
very
helpful in PvE. I sort of regret getting rid of Herbalism in favour of Enchanting, but oh well, can't really turn back now!

Enchanting
- BOP Wands
No Enchanting wand is BoP.
Nice list tho.

You should add the
60 Resist Fur Linings
to the BoP LW wrist list.
Never know when you might need a little more fire, frost, arcane, shadow, or nature resist.

The jewelcrafting one is a little misshowing as the prismatic gems opens up many possiblities. For example. The best meta gem for physical DPS requires a blue, Take the ones that gives 16 ap and 12 stamina, now you dont have to take that one, therefor gaining 38 Ap just there, plus the other gain of 22, summing up to a total of 82 AP. and more, may takes a 16 agi gem or a 32 Ap over a yellow socket bonus, With prismatic gems you dont need to make that choice, thus gainign even more AP. In short, only a fool would switch the best gems for the prismatic ones and leave the bad ones.

I have a question regarding the tank profession recommendation:
Mining has 50 stamina, which is nice. As far as I know this translates into 500 life untalented, depending on the class it can even give as much as 1000 bonus hitpoints (for feral druids).
Having 1000 bonus hitpoints is like getting a 1000 HP heal right after the first 1000 points of damage once at the beginning of a fight. Which is not bad but it's also not that great.
Herbalism on the other hand gives a 2000 HP heal at any point you want. And not only once but possibly several times (in a longer fight).
In addition to that these "bonus HP" don't need to be healed by your healers, making their life easier. The herbalism HoT alone should make it superior to any other profession for tanks.
Add in the herbalism-only herbs and you got the ultimate tanking profession, right?
Sure, it doesn't display any numbers and you have to press an extra button - but that doesn't make it less effective.
Why is mining or jc considered to be superior?

Why is mining or jc considered to be superior?
First of all more HP isnt the same as having a heal on you.
Mining and JC is considered superior since they give the biggest benefits.
+50 stam from mining and 3 damn nice gems from JCing. Remember that you don't need to worry about the socket bonus with the JC gems, so if there is an item where you want the socket bonus but the color is not exactly usefull for you, then JC can be your best friend.

Yes, having HP is not the same as having a heal. Having a heal is
better
then having HP since HP have to be healed by your healers (which costs mana and produces aggro) while the self-heal is free (and it may even produce aggro for the tank, I'm not sure on that).
The only situation in which having 500 HP more is better then a 500 HP heal is when you are about to die from a damage spike. And seriously, when do you see instant spikes that can blow a tank away with one hit? And even if that happens you got the herbalism-only consumables to help you out. As soon as you have 1-2 seconds to react the heal is already superior.
As a second choice JC is awesome, sure. The gems are really sweet. That's why I suggested to drop mining in favor of herbalism ...
For min/maxing JC + Herbalism seems like the strongest choice for tanks.
Or is there some "hidden" benefit of high stamina I don't know about? For Druids there could be since Imp. Leader of the Pack regenerates health based on the max HP. 50 Stamina (18 HP per Stamina in Bear Form) will then regenerate 36 additional health every proc. It can only proc once every 6 seconds, which (if it procs every time as soon as the cooldown is over which is not realistic) is 30 times in the Lifeblood cooldown. 30*36 = 1080, which is significantly less then what Lifeblood offers. Even if we add the 900 extra HP (which will only be available as "effective healing" at the beginning of the fight since miners start with more HP while Lifeblood can be applied several times) we end up at 1980. That's about the same as Lifeblood, as mentioned with the disadvantage of being only available as a one-time boost while Lifeblood can be cast several times in a long fight and still not taking into account the Herbalism-herbs.
This is the most beneficial scenario for Mining I can think of (huge Druid HP boost from sta as well as %-based healing on max HP) and still Herbalism comes out on top ...
