That doesn't sound like a bad group. You really don't need much cc in heroic Slave Pens (if any at all).
1) Two shouts from the warriors (battle & commanding)
2) Blessing of Salvation for the DPS and Kings for the tank.
3) Pally aura.
4) Double totems for threat and dps.
it's not a bad group set up if dps knows what they are doing, but generally at least one person doesn't know what he's doing so then some cc comes in handy.
on the subject i don't mind partying a dps without cc as long as he comes out of my guild only exception is a shaman when a druid is healing, then he can do the ress'ing ^^

As a tank, I'm always picky with groups. I usually just ignore tells for heroics when they don't have any CC. The other day someone asked me to tank Heroic Slave pens with a DPS warrior, 2 Shammies, and a Ret Pally. I promptly declined.
I'd like to see you do heroic Shattered Balls without CC, since you fear multitanking so much. =)
(Because it's clearly serious business)

i firmly believe you should play how you like - so if you like to dps, be a dps. don't be offended if people ask if you can tank, just say no thanks.
be sure and put a note in your LFG that says dps, and it helps if you list your AP. i enjoy tanking, but i have a couple fury warriors on my friends list who i bring into heroics all the time. they are good players and do very high dps, so the lack of CC is not a big deal to me.
just be prepared to NOT be a highly sought after class; you will probably get less invites than you would have as a tank. and learn your class/role well; there is nothing worse than a dps warrior who can't play. if you are good, you will get repeat invites.

A couple thoughts on this.
1) I have been leveling my mage a lot lately, running lower level instances like ZF, etc... I have seen dps warriors with no clue running around all the time. They break sheep, they dont have the right talents, they would rather a hunters pet tank then themselves, etc... I can see why dps warriors get a bad rep, we do it to ourselves. I personally feel that because of the gear dependency and lack of CC that people making warrior alts so they can "find a tank" just don't care enough to spec or learn to play the class until they reach 70.
2) Run with a decent paly tank and a dps warrior can treat an instance like a personal highlight reel.
I've been leveling a priest healer lately and have noticed the same thing, I love pugging on my alt but I'm starting to run Scholo now and when I hear "pet will tank" or "I don't need a shield" I say thanks anyways and drop group. There does seem to be a good many warriors that don't know thier class below 70, oddly enough all of the 70 warriors I know are very good at what they do.

My response to "lolarms" is "lolCC".
You do not need CC for heroics
. You just have to be creative: piercing howl kiting, cross-intercepting (warriors switch targets), fear when in dire need. Treat it like it's large-scale PvP: spell reflect, disarm, intervene (to save your arse), etc.
So far I have: Shattered Halls, Black Morass, Old Hills, Ramparts, Blood Furnace down with about 4 wipes between all of them: 2 arms warriors, 1 prot warrior, priest, enh shaman. (me and a friend as warriors, the rest puggies)
One of the instances I ran with that setup we brought in an enh shaman in greens - 0 wipes :)
Really, you need: 2 burst DPS warriors, shaman for windfury, 1 tank, 1 AOE healer (druid/priest).
In fact, so far I've had a lot worse luck in cookie-cutter CC teams. As soon as things start going out of whack, people lose their minds and instead of reCCing / kiting mobs... they just die.
As St3FuN said - do whatever you want, screw the rest.

But where can I get good gear for a DPS character? Most of what I find is made for tanks, and anything else I DO happen to think would be good for a DPS warrior is selling for an arm and a leg at the AH. Any ideas?

What does your current gear look like? There are a number of nice dps plate pieces to work with but we won't be able to suggest anything without knowing where you stand now.
For a new level 70 I'd suggest trying to get the
Burning Rage
set crafted for you. Some pieces of that are fairly easy to replace while others will last you a long time.

The problem is that heroics require CC to be easy. DPS warriors have no real CC, and thus are among the least useful specs. No matter how good DPS they do.
you dont call an off tank cc?
we're walking cc that hurts too...
