What would they be?
I enjoy PvP and have longed for new BGs forever. I'd add a new CTF (Capture the Flag) BG, a new AB-style BG, and a new 40-Man BG.

- i'd give gnomes the chance to make priests and paladins (Gnome Shadow Priest ! Little Face melting machine )
- i'd add a gear color customization (tailors could use colored thread to change the gears color and add some marks and such )
- to be able to a cratea a char marked as "banker" with a lvl 10 cap and special features for ah-ing and such (more slots in bank and maby acces to special ah features)

I'd quite like to see some (mostly) aesthetic changes made.
Guild halls is one idea, basically a guild-only instance. For unguilded people, perhaps the guild hall would become a guild recruitment hall?
The guild halls would include the eventually-to-be-implemented guild bank, as well as a message board (think like sending in-game mail, but for guild notes, since MotD rarely has enough space).
To add to this further, there could be a tally of recent guild boss kills and loot dropped/received, and even a DKP table if required.
Player housing has been thought about a number of times, but my solution would be to create a small new district in each major city (say 5-7 buildings). All but one of these buildings would have an instanced doorway, like the Champion's Hall in Stormwind, and would lead to a player house. If players are grouped, then the house entered would be that of the party leader (I'm thinking raid-house-parties here). The final building would simply be the <intsert city name> Housing Office, where you would purchase your house. The houses themselves could be a luxury item, costing, for the sake of argument, 6-10k gold. An epic flying mount is more of a luxury than a requirement, and so the housing should be as well.
Finally, I'd like to introduce a couple more professions into the game. The first would be Lumberjacking, a gathering profession. Basically, you can gather different types of wood; in the same way that mining nodes are found on rocks in the game, wood would be found on 'wood-nodes' that would spawn on trees / in forested areas.
Following this, there would be Carpentry and Scribe professions, both utilizing Lumberjacking as their gatherer.
Carpenters would make use of raw wood, turning it into staves, bows, arrows, crossbolts and other items, and could also make aesthetic items for player housing and guild halls.
Scribes would take the raw wood and produce paper, in much the same way as tailors take raw cloth and produce bolts. The paper would be used for scribing spells. At low levels, this would be a way for crating items such as the
various scrolls
that are normally looted, and new scrolls, which might allow the user a single-shot of a certain spell. Higher ranks of spell would only be created by higher levels of scribe.

Implement a rep reward system like the BE's have in their ghostlands for each race for the 1-60 grind. Tie in a quest chain that pushes various mid level instances to help additional pad / steer very new people in the game to the right places.
Instant world pvp: Allow faction leaders to drop their race's epic mount on their kill. Gnomes on Tauren.

I figured that if a new gathering profession was going to be introduced, if would have to cover more than one crafting profession.
Although non-alchemists and non-leatherworkers can make use of herbalism / skinning respectively, there really isn't much call for the raw material apart form a couple of quests, or a couple of one-off recipes for other crafters. Mining now has 3 crafting professions linked to it, with Engineering, Blacksmithing and Jewelcrafting, and it would be a shame to add a new profession for gathering that made your crafting choice for you.
