Hello,
I'm thinking of rolling a Priest but I have a question about how they level compared with grouping up. While soloing do they have a DPS spec? and what then happens when I group up as a healer? Is it possible to swap specs back and forth to alternate between a DPS spec and a healer spec? Would I need different gear for each spec?
Cheers

Priests have a DPS spec and it's called shadow. It's possible to swap specs (like on any other class) at level 30 when you buy dual talent specialization. And at levels you will probably be okay with the same gear because the items have pretty much the same stats (and also the stats you need in different specs don't differ that much)

The real answer depends on your play stile, heavily depends.
I.e. my friend have a Holy priest that were always holy. That's because she were never soloing WoW a day in her time playing her priest.

So basic question - with Dual Talent its possible to jump back and forth between two talent specs? Or is it two complete specializations? Eg, can my shaman go from Enhancement to Restoration, or are we talking simply about two different talent tree options? Im a casual player and my shaman has never changed talents do I'm not clear on this.

It is two completely separate specializations. Neither depends on another, or know anything about one another.
that's why "dual". You can safely think about it as about two characters sharing the name, class, race and inventory.
Specialization, talents, glyphs, it all will be different, when switch to your other spec.
