Which profession is the best with Enchanting?

Enchanting does not need any matching profession for the mats, as everything you get from Enchanting is from disenchanting loot.
For your 2nd profession, it depends on if you have alts with gathering professions or willing to spend a fairly large amount of gold on AH for mats. If either apply, you can pick any crafting profession that suits you.
If you want a crafting profession that doesn't need a matching gathering profession, then Tailoring is a good fit. My mage is a Tailor/Enchanter for instance.
Alternatively, if you are not interested in any crafting profession, you can pick a gathering prof (mining, skinning, herbalism) and sell everything you gather for a fairly good income. Some players even prefer to use two gathering professions until they are at the max level or decided they have enough gold, then change one of the two to a crafting profession that best suits their class.

My main is an enchanter/tailor mage, because of the reason explained above regarding leveling tailoring and using the clothes to disenchant for material. However, jewels are a good source of shards/crystals when disenchanted, as well. If you are clever with the crafts you make, you can even have a steady surplus of those in order to buy the other main ingredient for enchanting, namely dusts.

tailoring works well because it can act like gathering profession for enchanting. Especially at low levels it makes leveling enchanting easy because you are constantly going to have worthless cloth that you can then use to raise your enchanting.

Pluduras - JC will be insanely expensive for you unless you have an alt with mining to provide the ores. The end-game utility is great but if you are leveling you may want to reconsider.
As others already stated there is no "best" match for enchanting as you don't gather specific materials but disenchant items. If you do not have another alt providing you materials and cash and you don't want any distractions then I'd suggest gathering as 2nd. That way you can just sell your product on AH which can help raise $ to purchase cheap items off AH for disenchanting.
The tailoring suggestion is common because you don't "gather" materials for tailoring - it's cloth drops from mobs. And since you can't sell most of your crafted items anyway while leveling (on AH), disenchanting them gives you more value than selling to vendor. This is a totally legit strategy but the only downside is that buying cloth on AH can bleed you dry fast and it's another profession you have to worry about keeping up.

Definitely Tailoring, because all the green, blue and purple things you create, you can disenchant and get materials to use at your enchanting :)

As the others have suggested, tailoring seems to be the best option. You are able to grind the mats without too much trouble, then disenchant all the items you make that you don't need to support enchanting. I have a jewelcrafter/enchanter who just eats into my budget because I have to use another character to grind the mats for his jewelcrafting.
