IMO, Depending on the quest type, the lost kill XP is outweighed by the faster quest completion.
Many gather and "Go talk to this person" quests end up with 30 min of battles to get to them. Stealthing by and moving on can be, at times, faster leveling. It all depends on the quest, mob XP, and gear levels. If you can one or two shot the mobs, go ahead and kill them, but if it's a 2 -5 minutes per pack, I'd stealth.

Also, if you decide to level as Sub, you're specced into 110% walk speed - this will really add up when you're stealthing through mobs rather than fighting them.

You could always just not be stealth and go on about your day like any other class.

With me it depends, in questing I often do the stealthy stuff. If I am farming Rep. or Mats. I generally just facebash'em since I am going to out level them and will have cooldowns to deal with adds. According to a shadowstats link I am supposed to do 9000+ dps with my gear spec, and I frequently do 8500 according to the DPS meter, so I am doing something right even If I have yet to actually get into raiding after 5 years of play...........
Dismiss me if you want but I am probably part of the 60% that allows Blizzard to build the raids for you guys to ego trip over. My gameplay time usually comes after the laundry, yard and bathing the dog........ after that thing called RL.

I think the keyword here is "preference".
And you are confusing things here. Using Stealth =/= avoiding everything.
I often kill anything I come by. I also use Stealth
at all times
, because I like to open from stealth, even when I'm not playing as Subtelty. If you
are
sub, you get your movement speed bonus, the bonus damage, and huge Ambush hits.

You also need to factor in the fact that if you're playing on a populated PvP server, you're more than likely going to get ganked while trying to quest. This slows you down, especially if they decide to pitch a tent and camp you.
If you have the ability to stealth, you can avoid this. This speeds up your leveling time.
Also, don't forget about the buffs that you get when coming out of stealth. This can help speed up those 'kill x amount' quests, which will help you level faster.
Stealth is the most important thing about a Rogue. It really doesn't matter the situation, it will always benefit you in one way or another.
This is why the Rogue is one of, if not my favorite, class to play.

Stealth in raid environment can get you an extra second or two of dps time on bosses depending on the encounter compared to some of the other melee dps, like dks and pallys.
