Because they are immature and have no idea what goes into creating a video game on this scale. They want instant gratification, and they want it their way. You constantly hear them say things like "the guys at blizz are a bunch of retardz" and, "blizz just buffed that class cuz itz teh class they play lulz". They don't understand just how much of a monumental task it is to keep up on this high of quality control. If they could tour the Blizzard facility for a day, I think they would be singing a different tune.
The classes right now are the most balanced they have ever been, but you wouldn't know it by listening to all the idiots around here complaining.
Here's how it works:
If it comes out too late, Blizzard gets crap for it.
If it comes out too early and is buggy, Blizzard gets crap for it.
If it changed something, Blizzard gets crap for it.
If it doesn't change something, Blizzard gets crap for it.
If there is too much of it, Blizzard gets crap for it.
If there isn't enough of it, Blizzard gets crap for it.
If Blizzard releases it, Blizzard gets crap for it.

They do it because they want to.
So the next time the servers go down, or a patch is introduced try and have some patience. They are doing this stuff for you!
No, they don't. They do it because they like your money. It's not like they don't have PTRs.
Yes, because everything that can be sorted and solved on a small closed server with a tiny fraction of the player base playing on will automatically work when it is released onto all the main servers, running the full player base will run without a hitch. What a wonderful fantasy world that would be.

This essentially.
At the same time I do have some sympathy for them, when you say 'I pay for a game, I should be able to play for it' it's a
valid point in theory.
However, much like Communism, it doesn't work in practice. Give me one brief period a week and a bug free game over something riddled with them any day.

ExDementia nailed it pretty well.
Also, it's cool to hate.

Not so much rage...more a complaint on the lack of stability.
Think of it in the context of software. If a company put out minor/major updates to their programs(consider any popular one...Word,Excell,itunes) that had glitches or changes the way you learned to use it...it could lead to frustration.
Simple solution is to say don't play it...but in truth is that what Blizz wants?. These customers should not be discarded. They express their complaints, sometimes immaturely, but nevertheless they do offer insight.
So with WoW..when Blizz makes changes to a particular class, a player who may have just honed his rotation/skills, now in effect has to re-learn his class. No big deal for most, but for some, it's a source of complaint.
As far as glitches...how many years has Blizz been at this? You think they would have polished their methods of coding by now. It sometimes seems as if they put the onus on us to find their mistakes instead employing internal quality control. Who doesn't remember how bad Tol Barad was upon Cata release(you can find a video with Lore from Tankspot commenting on it). It took just a few days for the points system it to be exploited by the community.
Really?..after all the time in the making, Blizz had no idea with all it's "smart guys" such an exploit would be seized upon by the community. What does this say then about a company understanding/knowing their customer base. Not a good sign.
Blizz is also the master of it's own fate...if they have driven the populous to end game contents as being the crux of this game, then they better provide such content in a timely fashion. It should be relatively glitch free and fresh. Rehashing old contents is going to be a perpetual complaint.
It finally comes down to matter of longevity. Those of us playing for a longer period of time have had to absorb more then a relative new comers so our perspective is going to be different.
Sought of like your grandparents, who've seen more changes then the rest of us and seem to always be cranky about everything, you still got to love em. :) peace.

Think of it in the context of software.
Why? Software is essentially for the running of your technology. WoW is not. WoW is a part time video game we play for fun; if you can't take the few hours of downtime once a week (and at a time when 80% of us are probably in bed, too) then you need to re-evaluate your lifestyle choices imo.
Besides, you know when it's going to be so plan around it.

Most people don't get angry about it. However, the people who see that the servers are down and move on with their lives don't post on the forums about it, so all we see are the haters.

Software is programming...which was my point. Whether it's for work or play is of no difference. If your going to charge a fee to use it, then certain expectations are to be realized.
I never said anything about downtime...even a home computer needs to be de-fragged, so I can imagine what Blizz needs to deal with.
As far as glitches...how many years has Blizz been at this? You think they would have polished their methods of coding by now.
They have. Do you remember some of the bugs in Vanilla? The fact is, your complaint sums up as "they've had practice, they should be perfect." There will always be issues, since the game is constantly getting more complex, and more and more features can conflict with each other.
Also, I don't know if you've ever helped design a game, but fixing bugs takes time and mass playtesting. Asking for new content to be more polished AND faster is just absurd, unless you want the price of the game to go up. As the old saying goes, "Fast, cheap, good: choose two."
I do have rudimentary coding ability, though nowhere near anything on the level Blizz employs and in truth is not required, I understand what it takes, heck even Microsoft still needs to patch updates to fix certain problems in Windows. Yet we've come to expect a certain level of quality from Microsoft and when they failed to meet those expectations(i.e Vista) they heard it loud and clear. Who would have thought that after years of OS programming that Microsoft could have created such a dog.
So what I'm trying to say is you would think by now that Blizz would have gleaned enough info from previous patches(for example) to know how to introduce one that doesn't cause server restarts, glitches..etc.
As for the man hour and amount of play testing..well in truth that's not my problem is it?
If that's what required to produce a quality product then get busy. "get busy living or get busy dieing" as spoken in one of my favorite movies and which applies to surviving in any competitive business world.
A customer is already paying $15 a month for which most of that time the game is static, why then should a customer fear a price increase to expect quality on the occasional contents release.
OP...the reason you hear the hate and not the good is because when it's good people are showing it by paying $15 a month. Now if Blizz made the game free, I'm sure you would read a lot more accolade threads.
One other thing...I'm just presenting alternative views to the OP position, he asked "why all the hate" and I gave him some. A point a view is what he wanted ...wasn't it?
