Exactly. Blizz could do it if they wanted to.
The game is created/balanced, and then lore is created or changed to support it. Lore based arguments, imo, don't work, because lore is changeable. We didn't get Tauren paladins because lore was there to support them - we got them (in part) because it was easier to make up lore for them than for any other horde race.
The real issue (again, this is my opinion) is game balance - this is why the Horde is getting another race that can roll as paladins. Currently, Alliance players have 3 races that can be paladins. Horde have 1, and before BC the ratio was 2:0. Now, I don't see Blizz making it possible for a 3rd horde race to be paladins any time soon, but that doesn't mean they won't do it.
If they really wanted to, they'd come up with an elaborate story to explain it,
after
they'd made the decision it was necessary for game balance.
As a side note, I feel like my class has been homogenized. *doo doo shh*

It's not a balancing issue, they had shamans, we had paladins.
Only one race? Not a big deal, druids, case in point.
Alliance has more choices for paladins? More or less aesthetics.

Well, the Horde have 4 races that can be shamans, compared to Alliance having two. Whereas the Alliance will have 3 paladin races, with the Horde having two.
If anything, the Alliance should get another Paladin race. It isn't a balance issue at all.

I just really think it doesn't work. An undead paladin is like a socialist Tea Partyist or a Nazi jew or something. Paladins are suppose to be the anti-Undead crusaders and undead are, well, the undead. It just doesn't make sense at all. Sir Zeliek is an exception to the rule yes, but keep in mind he's a rare case, a man of strong will, his mind is still free else he'd probably be a death knight instead.
The Forsaken are all about the Cult of the Forgotten Shadow. That's why they've got warlocks and shadow priests. The problem with shadow priests is that in game you can't have a shadow priest without having holy and discipline available. This is one of those times when gameplay takes precedent over lore.
The definition of a Paladin, from my understanding, was a crusader who believed his cause was righteous. The Paladin vanquishes evil and protects the innocent -- not necessarily just Unholy foes, though clearly anyone against their deity would be susceptible to their wrath.
The problem is you're defining an "undead" -- or rather, the Forsaken -- as inherently evil, when they are just as capable as vanquishing evil and believing that "good" should prevail.
As was pointed out, if they believe they are doing the right thing, why couldn't they wield the Light? The Scarlet Crusade can still bend the Light to do their bidding, even though they are actually "evil." They BELIEVE they are doing the right thing. So what would make Undead different? ...other than the fact that the Light would burn away their flesh, of course. But in that respect, Holy Priests can already wield the Light for their "good" causes. Why couldn't an Undead crusader -- a Paladin -- do the same?

Paladins in Warcraft lore were created by teaching the clerics (aka priests) combat and knights (aka warriors) magic.
In other words, if you have a warrior and holy priest, you can theoretically come up with paladins.
That covers pretty much everyone.

The first paladins were organized to fight the invading Orcs, not undead.
