I was cat from 20-40, boomkin from 40-70, short respec to cat for part of 70 or 71, then respecced that to bear with KotJ for a nice leveling hybrid. I liked all of it, being dual spec'd resto for most dungeons (until I went bear, now I end up tanking everything).
The cat rotation is not difficult, just hard to deal with on most mobs because they simply die too quickly for you to either spend your combo points or really get your full rotation in. Bear is easy, swipe/maul macro + mangle, lacerate also on bosses/big single targets, frenzied regen and survival instincts + Enrage is a nice...."you thought i was dead" button, especially doing the Grizzly Hills PvP dailies. Seeing pallies not healing themselves because they think you are dead in 2 more hits is funny when you instantly add 5K life and regen 15k, and by the time they realize it I shift cat and mange, mangle, mangle to gib them.
Anyway, boomkin is not as easy as people say, especially if you talent into and actually use starfall, force of nature and typhoon. I didnt use force of nature for a while, then respecced and really liked it. I also really miss boomkin for being able to do a massive pull while farming cloth, rep etc. Squawk and Awe is your friend. The only thing I really like more about bear over boomkin is survivability/ability to pull half dozen + mobs of roughly my level and not be too worried about it. This is possible in boomkin with force of nature if no AoE, but you are going to burn your mana and have to drink to heal, etc. That is another nice thing about any feral, tho I hate having to shift out to heal.

You're pretty close to right. Resto isn't necessarily boring, but definitely can be if you make it boring.
As far as fun, Feral is my favorite. Kitty pew pew is pretty fun in pve.
Boomkin in PvE is probably the most random. Sometimes it does insane damage, other times it's pretty lame depending on consistency of Eclipse procs. PvP however, is very tough.
Bears can be fun if you make them fun. I enjoy pulling 4-5 groups of mobs in heroics. There are other things to raid tanking than just holding aggro on the boss. Watching your health, and knowing what's happening in raid and with the boss is what makes a good tank.
