Instance leveling is effective, but using Spirit Tap will not earn you more mana as Ninjaedge has already mentioned. You must have the killing blow in order for it to proc.

You have to get the killing blow to receive the effect.
Correct.
What I like to do on my priest, is if I see any runners I pick them off with my wand so hopefully (1) they'll die before they have the chance to bring any friends back, and (2) I proc Spirit Tap.
Holy Nova is also good for this when everyone's AoEing and you know many of the mobs are close to dieing.

once you get shadow word: death, you can try and exploit the mechanic a little. but chances are by the time you have the spell, shadowspec is not going to cut it for a healer anymore.
