Should I drop my profs?

when I chose professions on my latest project, an orc warrior (which now is my main) I started thinking about what is fun, and what I would earn most money from.
that was somewhere 2 months into WoTLK and I picked engineering to get some pre-raid gear, and due to the fact it had several cool benefits. I also picked enchanting since in my eyes I would make tonnes of money with it.
a few months later the disenchant option got out, the AH was overflowed with enchanting mats, noone needed to buy mats, and people are rarely giving tips, and I'm that kind of person that doesn't want to ask for a fee, although it confuses me, because prior to DE function, people had to actually buy the mats first and then tip a little, now they don't have to buy the mats, a small tip can't hurt their wallet can it?
back to subject,
engineering is a cool profession sure, but it's not as good moneywise, and now enchanting have dropped dead in my eyes too,. so what's your thoughts, shall I drop one or both of them and get new professions?
I also have a char with 450 herb/alch which I rarely play, one with 450 LW/skinning(only one ToC pattern since I rarely play him) and one with 450 mining/JC (1 epic gem cut since I rarely play him).

Keep enchanting. It may not seem like a great gold-maker at the moment (although the right scrolls still fetch a decent price on the AH) but come Cataclysm it'll be very useful to have for DEing quest rewards.
It seems you have most crafting professions pretty well covered so if you were to drop engineering, only blacksmithing, tailoring and inscription are open to you without having two characters with the same profession. Of those, inscription is the easiest to level up and, if used correctly, has the highest potential for making gold; blacksmithing will cost the most to level and isn't especially profitable; tailoring is a good way to use up any cloth you may have been hoarding but isn't particularly profitable, especially since its synergy with enchanting is no longer special because of the excess of enchanting mats around now.
If you're looking to make gold from professions, use your other characters: do the JC dailies; transmute a gem with alchemy every day; do the weekly WG quests on all your characters and use the honour to buy uncut gems (then cut them). Be a bit more imaginative with engineering and enchanting too: epic ammunition from the Ashen Verdict recipes should sell well; scrolls (especially older, rarer ones like mongoose) are still profitable; you can start charging for enchants in /2 instead of foolishly expecting tips (though selling enchants like that is a waste of time and energy, and should be left to nice people who think it is worth it).
Conclusion: by all means drop your professions if you want to, but don't expect to make any more gold with whatever you pick up to replace them.

the problem with my enchanting is since I started that late, I haven't got a single rare enchant : / been thinking of trying to farm kara to get the mongoose since some tanks still use it.
a problem with the ICC bullets/arrows is that they sell for a very tiny amount on my server, barely profitable.
I'm pretty convinced that I'll keep enchanting, as you said I will profit from it during cata, I can enchant my quest rewards with WoTLK enchants if I stack up some mats. And when dinged and people starting to raid people will probably want to get their gear enchanted.
I also agree that I'm a bit foolish expecting people to tip, think I'll start taking a small fee now else it's just a waste of my time.
the only thing I think of now, is dropping engi to get blacksmithing so I can get the craftable gear when cataclysm comes out. the main problem with that is that I would need to level my mining char before I can get the gear, so I won't get it before I can start getting gear through instances anyway. but whilst thinking of it, I will have the same problem with engineering.
to solve that I'll think I'll just ignore my engineering and get it up when I have to money for it, or save money now and simply buy the mats I need even though it will be at a high price x)

Engi makes some great cash if you're willing to get the early level pets, as well as watch for new recs! I've made loads of cash from the
Yeti
, bought me 3 epic flying mounts w/ training and the chopper/traveller's from that alone. If you get the chopper rec, you can sometimes pick up nice tips from that as well. I think my highest tip for that rec was 1.5k gold. I recently made around 35k gold from being the server first for
Iceblade Arrows
, would've been more if I had had the bullets.
TL;DR: it may not be as fast of a money maker as my JC & Enchanting, but it's definitely viable.
